    After binging out on CZcams sharpening videos I purchased the Edge Pro. My first week and I’m overwhelmed with kitchen knives, fabric shears and medical scissors. Just got feedback today on six medical scissors and the client is very pleased. Thank you Edge Pro.

    What happens when u go all the way to 2000? Is that not good? Why stop at 600?

      +GigaDonk These stones stop at 1000 grit. you can finish with a 600. hell even a 400. A 1000 is just more polished. The 2000 and 3000 polish tapes should not be used on kitchen cutlery.

      If you go all the way up to 2000, the edge will get polished, but it also has less "bite". When he finishes at 600, it is still very sharp, but that remaining bite will easily cut through the skin of fruits and vegetables. I hear highly polished bevels are ideal for those who make sushi, though.
