Replace the outlet behind the fridge with a recessed outlet. It's super easy to switch out and will allow the fridge to sit flush against the wall rather than having that gap

Girl, I understand about having to get what is available as far as appliances go. My husband and I moved from Denver, CO to Mayfield, KY 2 months ago. The house had all the appliances except the washer and dryer. (The stove and oven is older and needs replacing, but we can get by at the moment.) We needed washer/dryer asap so we got what was in stock and will order what we want next year.
I saw where you’re now living in Mayfield, KY I live in eastern KY and just want to say I’m so sorry for the devastation your town is facing. Praying for everyone that was effected by the tornado.

I love your aesthetic
As someone who has the smallest cubic feet fridge without it being a tiny fridge, I am now regretting it. I now cook for family and it is hard to have a small fridge. If you want to host, I know you think that it sticking out may be problematic, but it will also hold more food for big parties and hosting events. The trade off is convenience of preparing food and being able to store them well in your fridge before or after. I wish I had more room in my fridge!!
