- Newham food hygiene officer Matt investigates 'beds in restaurants' - the alarming practice of workers sleeping in kitchens. He has found 12 cases of people living in kitchens in the past few years. Jenny, from the Chartered Institute for Environmental Health, says that anyone sleeping in a kitchen presents a health risk to any customer.
It is estimated that there are more than one million cases of food poisoning every year in the UK. And almost half of these are the result of dodgy cooking by family and friends. Chris visits the Brixton home of Dave and Rich, who are cooking that Great British favourite, a roast lamb dinner, for their friends.
Our resident expert Ben casts his eye over the kitchen and offers advice on how to cook the lamb and vegetables safely. Lamb can contain E. coli on its surface but properly searing the outside of the meat will kill any bacteria on the surface.
But when Ben inspects the fridge he finds cheddar cheese which is way past its sell-by date, mouldy mushrooms and a bag of salad which is swimming in water, all of which need to be binned.
Matt visits a farmers' market in Taunton, Somerset, along with Carol, the head of training at the Chartered Institute of Environmental Health. Matt meets some of the stallholders and quizzes them on the lengths they go to in order to store and sell their produce safely.
And he visits a farm in Devon, where artisan producer Donna has been rearing her pigs for nine years. She also makes pork salamis which are dried and not cooked. Matt tries his hand at making a salami sausage and learns about the ingredients Donna uses to preserve the meat.
I take a food inspector as my +1 to any dinner parties I'm invited to.. coincidentally I don't get invited to many dinner parties anymore

after being to the UK twice i have seen many food establishments that just looked horrible. and have felt sick after eating there at least once. don't get me wrong i've had some really good food there as well, but the quality can range far apart.

If you pause the video, the meat is sitting in a plastic tray of some kind, given the amount frost that it's the freezer, and the small amount around the edge, i'd say the cover was just recently taken off.

My grandpa who's 85 doesn't like to waste food so he had a lot of out of date food but he went to hospital and we cleared out his kitchen and cleaned his house

My mum was like that too. By the time she was 75 & half blind the sheer amount of gunk on her food jars in the fridge was gross. Out came the bin, every single time but she insisted it was fine 🙄🙄

Those people(workers) that work in food business , must be trained in food handling or should be trained in food hygiene.
I wish food hygiene and inspection were this strict in the United States.

Worked two jobs for awhile that require food inspection and I can tell you that its pretty strict

Ok I'm not condoning dirty habits...but this is WHY people come out with allergy to this/'intolerant' of that...Their immune systems never get exposed to bacteria and therefore never build up resistance...

@@lloydgordon8020 Building up an immunity to a bacteria that could possibly kill you on first infection is a risky gamble. MOST foodborne bacteria can be deadly no matter. That's why we clean. There are certain bacteria that people should be exposed to strengthen their immune system, yes. But that does not include foodborne pathogens.

Zoey Nelson have you ever cooked lamb? It’s very fatty, it didn’t need any liquid adding. If you add liquid it stops being a roast and becomes a boiled stew!
@@JulieWallis1963 a braise has the meat 2/3 covered while a stew is essentially a braise but with smaller cuts of meat. I am professionally trained in culinary and baking and work in a reasturant where we braise lamb for specials about twice a week. I repeat, that poor lamb
31:22 blanching process removes the bacteria but also all the enzymes bc it's steamed veg so afterwards it's dead peace.
Some food is still quite fine after its 'best by date'. Use your best judgment and nose in order to determine if something can still be consumed before tossing it out. I've had countless things days after it supposedly 'expired' and was perfectly fine.

Leila Pereira me too! And remember the difference between 'best by' (a recommendation) and 'use by" (pretty much a rule). Red meat for sure can go ages. I also tend to freeze things long after I should to avoid waste. My son ate chicken wraps yesterday, he said they were delicious and he's not ill 😊 I'd NEVER take chances with the kids and especially never with chicken. Their expiry date was February 2018 (yes, I was late clearing out my freezer 😕) 👍🏻

Best before is for the ultimate best it could be, also its to cover the shops for legal purposes, if they put the best before a couple days later & someone gets ill you can sue them
"Use by" and "Best Before" are different things. Best Before is a guidline telling you that after this date the texture and taste of the product may or may not be altered due to age and Use by is a warning telling you that after this date the product should not be used as it may go off soon

It should be compulsory to be trained in basic food hygiene. I worked in a children's private day nursery and we all had to go on a course over a few days, otherwise you couldn't enter the kitchen.

I have never understood Employees must wash hand signs. If someone is that gross to not instinctually wash hands in a public bathroom, or even before they touch food, then they have no business in a restaurant. Instant firing, that's disgusting.

The main difference is that the kitchen is a clean zone and the bedroom is not. Do they sleep in uniform? What shoes do they wear? Do they brush their teeth in the bedroom? It actually makes total sense.

@40 mins sushi has significant risks associated which are reduced with vinegared rice which is standard procedure. Secondly fish for sushi is required to be frozen for 24 hrs to minus 20 to kill parasites. Or minus 35 for 15 hours. This is required by law and not mentioned in this video.

I fully agree that the food hygiene has to be number one priority, but can’t help feeling so incredibly sad and sorry that the worker is forced to live in such dreadful conditions. Living and sleeping in a squalid cupboard between shifts. It makes me so irritated that good and decent people have to live like this. Grrrr don’t get me started on all the homeless folks I see in this freezing weather. Rant over … for now.

Not required in the UK. Regular hand washing is better as people forget to change gloves but will wash hands more often
