- In today's video, I show you how to make this delicious managu dish the easiest way! Managu is one of our kienyeji or indigenous kenyan vegetables that will mostly go with ugali. It is nutritious and I make it without overcooking it. If you've never eaten it, you may struggle a little with a bit of its bitter taste but as you continue, it might just become one of your favorites as it is for me, and especially if you can make it well. I show you how to make it tasty in the video.
INGREDIENTS:
managu (African nightshade) -2 bunches as shown in the video
1 medium size onion
1 medium size tomato
1 teaspoon tomato paste (in the absence of tomato paste use an extra medium size tomato)
1 Clove grated fresh garlic
4 to 5 tablespoons cooking oil to fry
salt to taste - about 1/2 teaspoon
Spices of choice - I used 1/2 teaspoon curry powder, 1/2 teaspoon garam masala and 3/4 teaspoon paprika
1/2 cup cream

Osuga is traditional recipes just like Carribean foods the recipes calls for longer marinating and longer cooking
Thanks for this Serah..
I like to not overcook veggies generally. I find managu tasting better when not overcooked.
If one prefers longer cooking, I think it's still okay.

The English name is African Nightshade. You could find out from seed companies in Kenya such as simlaw seeds and the like. They should have the seeds.

Question Clara...can you substitute the milk cream with mala?...its hard to find milk cream...nitajikakamua but in the meantime is that substitution okay.
Hi Christine, when I don't have cream I use just milk though it's not the best. I'm not sure if mala will work well but I think it's okay to try
I actually think I could try that next time now that it's heavy. Hadn't thought of it 🤔
@@recipesandhospitalitywithclara what about the plain yogurt??
@@shalyneatieno4360 I've also never tried with yoghurt. I tend to think though it will work. I hope I can try..
Thank you so much for watching too!
Cooking cream is available @ supermarkets e.g Naivas
I like the recipe but I have a problem with the tomato paste. I feel it's not necessary ma'am
Thank you so much for watching !
You're right in that it's not one of the critical ingredients. It enhances the taste alot though. But you can do without it.
Is Managu bitter leaves
Yes, the leaves are bitter. Some species are more bitter than others. I hope that helps. Thank you!
My friend all the nutrients/vitamins , are all in the liquid you're spilling out. Otherwise all the nutrients are thrown or rather spilled out. Good luck my friend.
