    I would suggest completely cooling the liquid before adding the vodka. You don't want to evaporate the alcohol by adding to the hot liquid.

    Hi! I love your channel, looking forward to watching more of your videos. Quick question: I just made my own Grand Marnier and Limoncello, and the biggest tip I found online was that I should avoid the pith when using my orange/lemon peels. Is the potato peeler an effective tool for that? I used a microplaner and it took FOREVER.

    If the heat of the simple syrup helps to extract flavor from the orange peel, wouldn't it make sense to wait for it to seep a bit before adding the vodka? Otherwise, the vodka cools the mixture down too quickly.

    Real recipe: pour light rum on the zest let sit covered at room temp for 7 or 10 days strain out peels make a simple syrup of equal parts water and sugar. Add simple syrup to the alcohol until it's as sweet as you like. If you're drinking this with dessert or as an cordial I would use less syrup if using as a mixer for margaritas I'd use a bit more.... I have a question how hot is the water when you add it. I'm curious because it seemed like it may be hot enough to cook away some of the alcohol. That plus all the water would make it quite weak unless some fermentation happened and made up for it. I'm not sure but would like to know before I try this.

    • @asrose7979
      @asrose7979 Před 5 lety +2

      Great question, and You are correct about cooking off the vodka. The alcohol is important because it dissolves and carries most of the essential citrus oils which hold the orange flavor. This recipe can be improved.
      Simple syrup boils hotter than boiling water -hot enough to fry in- above 300°F, and certainly _well above 173°_ ( the evaporation point of Ethanol ). I recommend several changes to this recipe, first of which is to cool & mix the room temperature syrup to cold vodka. 🌹

      not an issue, call it 50 celcius after added the vodka. Hell, call it 79 celcius with the vodka with 50% dilution, giving approx 20% abv of the mix - boiling point of the ethanol-water mix gonna be in the 90's. Gonna be losing hardly anything in the time it takes to get it covered.

    • @mattdeanmusic
      @mattdeanmusic Před 3 lety

      @@gmonkman No mate that's not how science works.
      The boiling point of ethanol is 79c, regardless of how much water is in it. Plus, the sugar content of those oranges would allow the mix to raise well above 100c - ever seen how hot candy gets when you make it?

    • @gmonkman
      @gmonkman Před 3 lety

      @@mattdeanmusic "not how science works", wtf are you talking about?
      What we are talking about is the boiling point of "binary mixtures of volatile liquids" (that is quoted so you can google it). Ethanol does not all boil off followed by the water.
      What infact happens is the system has a single boiling point determined entirely by the pressure and the mole fractions of ethanol and water. However, for any given mole fraction, there is a difference in the vapor pressure between the ethanol and water components, with the vapor pressure of ethanol being greater than water, hence the vapor contains more ethanol than water. This is how distillation works.
      But, unfortunately the ethanol-water system is non-ideal, and eventually the distillate with be an azeotrope, with the composition of the distillate resulting in the vapor pressure of ethanol and water being equal, making further seperation of the ethanol from the water using standard distillation impossible.
      Any undergrad physical chemistry text book covers this.

      The orange flower water is not required if you are going for a straight, basic orange peel flavor to be used in "house" cocktail recipes calling for generic triple sec, however, citrus blossoms of any kind will add a delightful aroma and complexity to your finished product. I cook the whole flowers briefly in the syrup, to liberate the essential oils, then strain them out and let them steep in vodka for a few days, to extract that last bit of perfume. 🌹

    Don't know where to start but it's a shame you can't vote to have inaccurate videos removed from CZcams!
    I'm not sure what you made, but it's not a tripple sec and not even close. It's much closer to an Arancello (Limoncello cousin) than anything else.
    Tripple sec is made from DRIED orange peals that are a combination of sweet, tart and bitter (triple) and it dryer or with less sugar (sec) then this. You would not start with a vodka either but something much higher in ABV. The higher ethanol content the more the extraction of the oils from the zest.
    NEVER, EVER add alcohol to anything warm/hot as the ethanol will evaporate right out on you. Ethanol evaporates at room temperature which is why high end bars don't use pour spouts on their good spirits but leave them sealed!
    I'd suggest anyone watching this to go watch a video of how REAL Grand Marnier (cognac based) or Cointreau (neutral spirit) is made or even any other Curaçao based spirit is made.
    There are much better DIY versions closer to Grand Marnier or Cointreau on CZcams that are much better and much closer to the real thing. This is just a marinated orange zest orange liquor that won't be a replacement for triple sec in any recipe/cocktail.
    This recipe uses 2 cups water and 4 cups sugar with about 2 cups of OJ for 8 cups of ZERO proof mixed with 750 ML of 80 proof vodka. So 8 cups is 1892.71 ML or zero proof plus 750 ML of 80 proof for 22.7 proof or 11.35% ABV.
    Grand Marnier & Cointreau are both 40% or 80 proof (USA) vs this week 11% mixture of orange liquid that is like a medium strong wine at best.
    Don't both trying to use this in a "Cadillac Margarita" or anything else! Go buy a cheap bottle of Tripple Sec or learn to make a good orange liquor. :)

    • @gmonkman
      @gmonkman Před 3 lety

      That is a long post which I appreciated, but loss of ethanol due to evaporation will be minimal. Try this: Dilute vodka with water to 11.35%, heat to 40 celcius. Pour into wine glass. Measure weight loss of solution over a 10 minutes, It will be minimal. Bet it isn't even 1gram per minute decrease per 100ml.
      Oh, all liquids at room temperature will evaporate - its simply a result of the distribution of energy amoung the molecules at the gas-liquid interface.

    • @asrose7979
      @asrose7979 Před 5 lety +1

      There should not be any fermentation involved in these home-made liqueur recipes. All the fermentation is done at a federally regulated distillery where the vodka comes from, and where any methanol is removed before bottling.
      Fermentation requires relatively low acid, alcohol and sugar concentrations, such as are found in low-acid fruit juices and grain broth. Keep your orange juice refrigerated or mixed with vodka, to minimum 20% alcohol, or use frozen concentrate.
      The Methanol in moonshine comes from the fermentation of barley, rye and corn brans, and is customarily poured off in the early stage of distillation by reputable shiners.
