Pachi Mirapakaya Pachadi | Roti Pachadi | Green Chili Chutney

Ingredients for Tempering:
(Tsp - Teaspoon Tbsp - Tablespoon ml - millilitre gm - Grams lb - Pounds)
Oil - 2 tbsp
Avalu/Mustard Seeds - 1/2 tsp
Bengal Gram/Pachisenaga Pappu/Chana Dal - 1 tsp
Dry Red Chili - 1
Curry Leaves - 1 sprig
Hing/Asafoetida - 1/4 tsp
Ingredients for Pounding/Grinding:
Serrano Chiles (Indian Chili variety will work as well - Spice level will vary) - 12 (158gm). I used a mix of unripe and ripening ones. You can use just the green/unripe Serranos
Ginger - 1 1/2 inch after peeling
Salt - 1 1/2 tsp or to taste
Tamarind - 15gm (soaked in very little water to soften)
Detailed Process:
To a mortar, add green chiles, ginger and salt. Pound them to a semi coarse texture. Now add, tamarind. Pound them until everything well ground but still has a texture as shown in the video.
Set it aside.
Note:
1. You can also pulse in a blender or mixie.
Tempering:
Take wok/kadai, keep it on medium flame. Add oil. Once warm enough, add Mustard Seeds, dry red chili, chana dal. Let the mustard seeds splutter. Turn off the flame and add curry leaves and hing. Give it a mix.
Add this tempering to the ground pachadi. Mix everything well. Serve with hot rice and ghee or with idli/dosa or with curd/buttermilk rice. Enjoy!
