Brownie Cookies Recipe:
- 100g (3.5 ounceS) Dark Chocolate ( 70% cocoa) DO NOT use anything less than this or your cookies will be too sweet.
- 50g Butter ( 1/2 STICK)
- 1 Egg
- 75g (1/3 cup) Sugar
- 25g (3 tbsp) Flour
- 1/4 tsp Baking Powder
- 1/4 tsp Salt ( DON'T skip the salt)
****IMPORTANT please read below *****:
There are four key aspects of this recipe that are important to getting a good result, with a soft raised cookie. These are:
● Beat the egg well to incorporate air.
● Do not over-mix the batter when you add the chocolate and flour, otherwise you will knock the air out of the egg mixture
● Rest the batter for 10 minutes
● Use the fan setting on your oven if you have one.

Hi lovelies! For all of you having trouble making this recipe, here's a couple tips:
● Your oven needs to be preheated well. Everyone's oven is different, so yours may not be as hot as mine OR may not have a fan setting. If your cookies are turning out flat, bump up the tempetarure to 180 C(350f)
● Don't be afraid to cook these 2-3 minutes longer. These crack towards the end and if your oven isn't hot enough they may take a bit longer to cook.
● Make sure you are whipping the egg well and don't over mix the chocolate/flour.
● Rest the batter for 10 minutes.
● Don't cut the sugar and make sure you are weighing everything correctly.
●Unfortunately there are no ingredient substititions for this recipe.

The cookies are delicious. Of course they didn't bake for 8 minutes on my oven, but who cares. They were really delicious. This is what I love in Emma's recipes, usually everything works out perfectly.

I actually had all of these ingredients! I just made these cookies and they are delicious! Super light, thin with a crispy top but chewy soft inside. Perfectly sweetened and they did actually have the crackled top. Mines made 10 regular sized cookies. I was too lazy to use a piping bag so I just used the spatula to scoop the batter onto the parchment paper and that worked just fine. Thank you for the recipe!

I made these cookies today. Turned out lovely! They were sweet, with a fudgy center and crispy edges.
Despite me keeping the batter few hours longer in the fridge than you should. I just let it melt a bit in room temperature before putting in the oven.

If you want to enhance the chocolate flavor even more, add some coffee or espresso powder to your batter! 🤩 I swear, it goes so well with brownies, and you don't need a lot, just half a tablespoon or so (or more if that's to your liking of course) 😊
