I am impressed with your assortment of canned foods. I have been going back and forth on canning shrimp, but your success has given me encouragement.
Awesome idea for the turkey. I hoard them in the freezer and the meat usually lasts us through until spring when I start selling plants. It has saved us many years where we would otherwise not have any food at all. I can't wait to start canning the turkey instead!

With respect to the canned ground beef, I can and use it for spaghetti sauces and burritos etc. therefore, I tend to season it when I brown it, so that it has wonderful flavor when its done. Having it pre seasoned makes it easy to add to my recipes.

Thank you so much for sharing the variety of things you can! I'm especially happy to see your take on canned chicken. I wasn't thrilled when I tried raw-packed canned chicken before, but I think pre-browning it might be a good idea. Also I appreciate seeing how you can larger pieces of meat. You're so good at thinking creatively and finding unique solutions! This really extends the potential usefulness of these foods.

I loved your video I know now I am not crazy. Some of the things I canned, you canned. I canned some blueberries I had in my freezer and some strawberries also. After I canned them I said to myself, "Now what are you going to do with these?" Well I decided I would puree them when I got ready to use them and add a little sugar or Stevia and thicken it a little with cornstarch and make pancake syrup. I tell people who worry about my sanity not to worry about me when the lights go out but don't come looking for a handout. One person told me the stuff I can won't last but a couple of years. I laughed on his face and told him I had eaten some figs that had been canned in 1988. They weren't the best quality but still edible, And if you are hungry you will eat almost anything. Now I don't have to. OH hear the laughing around the world when I tell them I am going to can SHRIMP. LOL. I did see someone who had canned bacon in parchment paper. It looked really nice

Love your video, I'm not even a rookie, just a canning student. Your video has given me ideas for so many things to can when I finally graduate and become a rookie canner. My grandchildren will be my students and hopefully remember what good food tasted like. Thank you for sharing.

This was so interesting. pressure canning in my country is rare but I just received my 1st pressure canner. love the variety of items you can. (I know this is an old vid but great work) cheers

You're an inspiration. I'm going to try shrimp now, which I have been so hesitant to try. Oh my gosh, you made me laugh, man-on-the-moon vs. zucchini processing knowledge! It's SO true. The USDA...our gov't at its finest. I can both squash and zucchini. They can't make me believe that canned squash is more dense than a canned potato! Give me a break! The walnut praline syrup sound yummy. I LOVED this video and I'm so glad you posted. You are the canning queen.

Wow, you can so much! Tomato sauce, carrots and beans are my big three because I get them in plenty from my garden. My wife doesn’t want me to can meat, she is head chef (except for BBQ) so I have never tried. I’m planning to grow okra next summer for the first time, I’m hoping I get enough to can some pickled okra!

I watched the whole thing, it was very helpful. I love seafood so was happy to see the shrimp. I have never canned anything except some kumquats years ago. Nearly all of my food storage is store bought canned food and dried beans, grains etc. I think I am going to get a vacuum sealer and cook up some turkey and freeze it before I start canning.

You have an amazing assortment. I bet you just love love love looking at your shelves. I use the Putting Food By book also. I think once you have some success and failures under your belt you find you understand the reasons the USDA has become so strict mainly for the novice. I am going to try my hand as sweet potato's if I get a crop out of the plantings at the retreat. Glad to hear they taste great I hate canned sweet potato's. Blessings!
I agree about the zuke and tomato with the density issue. One pound cans of this are available at the grocery anyway.
When I can chicken & turkey, I boil it with bell peppers, jalapenos & onions & add spices & seasonings with the "dump & taste" method. When it's tasting the way I want it, I let it cool & pick the bones & gristle out & pitch it for the cats. I can the meat with some of the broth & can the rest of the broth with all of the peppers & onions in it. The broth is usually used to cook brown rice or spuds but can be used to make soup or gravy. The last turkey I canned, I got 8 pints of meat & 9 qts. of broth.
LOve seeing all your canned food.Its great not having to buy all that in the store,makes for a quicker shopping trip too.Plus you know whats in it.I've not tried the walnuts,will have to now:) Your comment on corn and the long time to process.My Mother in law did Hers for 25 mins. at 10 lbs. presure for pints.It turns out great,tastes better too. i've been doing it that way now for 25 yrs.LOVE IT.I'm with you on the meat and veggies mixed,after a while it starts to taste odd.

I've never laughed at a canning video, before. This is great. "We don't do different around here". "They can put a man on the moon, but they can't come up with a zucchini processing time". My wife had to ask what was so funny. Many thanks.
It's fresh carrots I do not grow them but I go to a flea market where one of my neighbors sells hers and I put zucchini and I put yellow crookneck squash in with my carrots I thought that I would cook it on the time limit for the squashes and then my character would still be slightly crisp and it worked and it was delicious.
I am sooo jealous! Just joking, a little. :) you inspire me! I began pressure canning because of your presentations. Thank you for freely sharing your expertise and for reinforcing the absolutes of 'read your books; take no one's word; educate yourself'. And, yes, what you do DOES help.
Ball Blue Book is my Bible for home canning. A few years ago I took several blue ribbons at our local county fair.
I totally agree with you about canning your soup ingredients separately. The worst thing I ever canned was pork vegetable soup with turnips. it was horrible...nearly inedible...the turnips got bitter and sulfurous due to the long processing time...
The only way I've put up turnips is freezing them. I also have dehyrated them.

We've canned chilli with it. A qt of canned chilli with a qt of canned beans makes a couple of quick meals for two, will last a couple of days.
This is a very good video, and you're very creative about what you can. Your products look amazing. Would you believe that I once canned cherry tomatoes? They really turned out quite well, but it was labor-intensive. I also make lots of pickles, which we love.

Well I am officially inspired! I finally have a garden again and hope to get as many things canned as you just showed all of us. I need to replenish the shelves. They are so empty! I like the sounds of the zuke with the pineapple. Would you share the source for the recipe?

You know, I always thought the rings were re-usable, but the site said always use new rings. I wonder if that changed recently. That was the entire reason I had thought about investing in them. I was going to re-state that the gaskets are reusable, but I checked the site again to be certain, and noticed that. Glad we had this chat. Great vidoes on Potato, tomato, and roast processing.
Hello! I am a very new canner....so this is very inspirational for me to see, thank you!! looks like you use mostly quart and pint size jars...I am trying to be smart in sizes to concentrate on buying...being new to this, I am sure I am gonna spend a fortune in jar purchasing! here is a stupid question...why do you remove the rings around the lid when done canning the product? i will be watching a lot more of your canning videos...wondering where everyone stores all this great food...I don't have a basement OR a garage! =(....guess I need to invest in a ball book for canning. lol...thanks again.
I have been canning for about 14 years now and I still have beans, beets, tomatoes, soup, chicken, pork, crab meat, shrimp, and other items that I did from 2005.
Last month I opened a can of pinto beans , cooked them and the taste is the same.
the chicken with bones I was never a big fan of the smell but the chicken breasts canned still taste great.
the pork I opened a jar in January to make pulled pork. Tasted great and I am still here.
I think if you follow the directions on canning and keep everything sterile through the process it will last a long time.
I am frugal by nature and I buy meats and other things on sale and can them.
Since I live in Hurricane alley I will sometimes lose electricity from time to time so I dont like putting a freezer full of items that could go bad.
I hope what I am posting here helps people.
Linda's Pantry browns her ground beef and then cans it without adding liquid. I tried it and it works. It makes it's own liquid and the flavor is better than when you drown it with water and make it mushy.
First let me say that I really enjoy your site. You are very down to earth and knowledgable . My question is about sweet potatoes, do you pre cook them? I always try to store mine , but now I will try my hand at canning them.
you should try dry canning the ground meats, they come out sooooo much better! i also dry can kielbasa it is delish :)

The primary issue with canning zucchini is that it is a low acid food but home grown tomatoes are normally high acid increasing the jar’s overall acidity when combined. I frequently add a dash of white vinegar and/or FruitFresh to low acid foods when canning. It increases acidity without adding appreciable taste and the FruitFresh also helps preserve color.

FWIW I have a thought on hamburger: Whenever I cook mine I always add a chopped onion. That seems to go with pretty much everything I would ever use hamburger in, and maybe the aromatic would help counter the "dog food" smell you notice.
The other thing I've done is not really canning, but I browned a bunch of hamburger and chopped onion, drained, and packed it hot into jars with no juice. Put on lids and rings and cooled it and stored it in the fridge. It lasted months, and tasted perfect.
@4:24 when you say the hamburger is different, and "We don't like different around her."
Haha it made me laugh because it reminded me of what my husband likes to says, "I like it normal."

Thanks! I was hoping that's what it was...you can see the "line" on the pieces of chicken above the liquid, just like it was drawn with a ruler. I swear it was all under the liquid when I put it in the canner, I made sure it was. It is just unnerving since this is only the second time I used a pressure canner. :) Thanks again for the videos!

Thank you so much for showing us your work. Do you know of any other spices other than sage, that we should avoid? I will be canning chicken soup very soon using cooked chicken, potatoes, carrots, onions and celery; and I thought I was supposed to use only canning salt to spice the soup. Can I use other spices like garlic and pepper? Thank you so much!

Love your videos - thank you! I canned chicken yesterday and have a question if you have a min. I cleaned, then cooked the chicken in the oven, removed skin/bones and used the broth to can it. Followed directions exactly. I had to process multiple canners and kept the chicken hot in the crock pot between batches. This morning it seems that a few pieces turned a gray'ish color in the top of the jar. They are well sealed, didn't lose liquid, never lost pressure during the process. Any idea why?
For raw pack apples I'm wondering if drying them a bit in the oven before packing in jars would help the apples hold their shape and evaporate some of the air in the slices? And pumpkin too?

I remember hearing years ago that canned vegetables and meats should be boiled for a full fifteen minutes before eating. Do you do anything like that?
Regarding your blueberry not-syrup-but-jam, I find that blueberries seem to like to congeal everything nearly as much as okra does. For instance, make a smoothie with a lot of blueberries and it's more like blueberry gelatin within a few minutes. I have used jam as syrup before on pancakes and such, though, by heating it first.
How are canned grapes? I enjoy baking or grilling with them, especially seedless, because they hold a firm texture better than other fruit.
Now we both need to do a VR to horticulturenadhome's video showing dehydrated food. I may work on that tomorrow. ( I still owe somebody a video on how to make tapioca. Sometime I get ahead of myself.) LOL

Kudo's to you. You know what you're talking about, and you have done your research. I have done a bit of canning and am always surprised by the lack of knowledge many people have about this skill, and the out of date references and old wives tales. My question to you is have you seen or used the Weck canning jars? They are used extensivly in Europe, The lids and jars are glass, but the seal is a rubber gasket. The lid is held by clips that are removed after cooled. Gasket is reusable.

I was wondering...I've made Zucchini "applesauce" which is delicious It's 2 large zucchini with 3 large apples and 1/3 cup cider vinegar. 1/2 cup sugar and some cinn/nutmeg/cloves. (I usually triple the recipe) do you know if this was to be canned if it would have to be done in a pressure canner and if so for how long or if it could be done in boiling water bath because of the vinegar?

My Mom canned almost everything when I was a kid. We lived on a farm. She canned all our veggies and meat. She never had a pressure canner. and neither have I. I haven't canned for over 25 years and since I expect a power outage I needed to empty my small freezer. I canned 20# of chicken leg quarters and breasts. #5 of hamburger/w onions. Pork Roast, Beef bottom round . and I cooked all the meat before I canned it. I processed the meat and all my non-acid veggies for 3 hours in the Hot Water Bath method. I also canned Potatoes w/carrots and potatoes w/carrots and celery. Zucchini plain and w.tomatoes.I made Hot sauce, veggie soup and unrolled cabbage rolls. . I made and canned Hummus,(it is so good) I won't bore you with all I have canned But I am having a good time canning all this food. I also canned everything w/o salt or sugar. I am waiting for peaches or nectarines and sweet potatoes to go on sale.
After putting some veggies in a collendar to drain for something I was making, I walked back in the kitchen and all I could smell them before I got close to them it was the LAST time I had store bought canned veggies

It's not recommended to can anything in half gallon jars except for fruit juice and I've never done that.

How about canning chicken leg quarters?
Thinking about boiling them and removing the bones and skin then canning the meat and the broth they cooked in.
The fat, bones and skin can be canned for dog food, gotta feed the watch dog too, she has much better hearing than I do and she loves chicken.
I canned 7 qts of chicken legs in qt jars but they don't look all that great in the jars, haven't tried them yet so can't comment on how they turned out.

i liked everything you talked about and everything you canned. i'm 62 years old retired with my first garden. i've canned potatoes, pea pods, yellow squash and a tomato based veggie stew. i have alot more to can.... would you come to work for me? ha ha. richard
If you use lean hamburger, cook it only enough to separate it into little pieces and can it dry without water, it will taste and smell like roast beef not dog food. My hubby loves it. The meat should be still pink inside. You just want to cook it so it doesn't mash together in one solid piece.
I know you said you cooked the bacon half way before canning, but was there anything else you did or just stuff them in the jar and can? I have heard some can the strips in parchment paper.
