      @@dannyr313 I have used both, but you don't want to use a lot of it it should enhance and make it elevate the Mac n cheese but taste like you added mustard to it!

    If you fancy a white cheese Mac ‘n’ Cheese, brie cheese works wonders as a melty cheese for the sauce! Creamy with a slightly nutty bite, worth it!

      Mixing usually helps in making it melt much faster, usually little pieces might remain since it takes much longer for them to completely melt. I personally don’t mind them, they do change the texture a little in a way i enjoy

    I made this and it was AWESOME! Seriously, the best. I think what makes it really good is including the corn starch in the cheese and also the one egg in the mixture. The topping was crusty and cheesy and complimented the creamy mac and cheese center. All around good mac and cheese!

    1. butter in pan
    2. mustard powder
    3. cayenne
    4. milk
    5. egg with a lil milk
    6. cheese with cornstarch after taking off the heat
    7. add the pasta
    8. add to baking dish
    9. more cheese on top
    10. bake (180°C, 20min) cover dish with foil
    11. broil (5min)
    12. rest for 5min

      For that extra bubbly, browned top they did not cover with foil. :) She stated other recipes cocer theirs, but for this recipe they did not.

    I made this and it was delicious. The mustard/cayenne pepper combo worked really well. I will say though, if you're planning to make this and you're using metric, double check the measurements as they're a bit off. The recipe estimated 8 servings using 8 oz of pasta, I used approx 12 oz (375g) pasta and got 4 large servings. Also the recipe says prep time takes '10 minutes'. Yeah, maybe if you're using store bought pre-shredded cheese, but it took me at least 40 minutes prep. I also needed another pair of hands for the tempering part. The only other change I made was a few sage leaves and chopped chives as garnishing added pre-broil. Overall, a very enjoyable mac and cheese, but not as quick/simple to prepare as I thought it would be from the video.

    Thank you for this recipe. I cooked mac & cheese according to your recipe. The result is excellent. Shopping for proper cheeses and preparation took a long time. I got some difficulties when adding an egg to the sauce. We, my wife, son and I ate all of them at dinner. It was so delicious. Thanks again for the recipe.

    As a trained chef, I have to admit my initial doubt with this recipe since most mac and cheese I heard of are made with a roux or bechamel. However, they lack the gooeyness that you find when eating velveta or kraft and so on. I always wanted to make mac and these this way so I gave this recipe a try. Boy was I impressed. The technique of adding tempered egg and slowly emulsifying with cheese blew me away. Gone are the days starchy and non gooey mac and cheese. Great video!!!!

    Great tips, TY! I usually add Panko or any seasoned bread crumbs on the top but I’ll try this without it.I’ve never thought about aromatics in Mac and cheese. Looking forward to trying this recipe and methods.🧀

    Looks good. As someone's who tried many Mac and cheese recipes and tweaked them to my liking, I wouldn't used overprocessed American cheese. It gives it a weird flavor and leaves the texture almost too creamy which was evident by the top browning but the underneath layers still being extremely saucy and not "binding" with the noodles.
    Also wondering why they didn't grease the baking dish even if they were to do it just lightly.
    I've found the best way to make Mac and cheese is to make a roux and then make your sauce from there. You don't need a lot of butter or flour, just even portions of both, boil your heavy cream or whatever, and add your flavor and melting cheeses and season to your liking.
    I do agree that ground mustard gives baked Mac and cheese that extra bite of flavor.
    Not a bad recipe, just has potential to be better.

      This is a no roux mac& cheese. The main thing would be to shred your own American instead of single slices, but the recipe in the vid looks delicious

      I agree. I also cringe when I see Velveeta as an ingredient, it RUINS the taste as it adds a "chemical, fake" flavor. I detest it! So many people use it, and I am baffled.

    I’m the kind of man that gets Mac and cheese no matter the restaurant, I will eat a box of Mac and cheese for dinner no problem, if I feel like getting fancy I’ll add chicken, bacon, jalapeños, etc. THIS CHEESE SAUCE IS THE MOST DELICIOUS CHEESE SAUCE I HAVE EVER HAD.     Definitely going to use shells next time and try half cheddar and half mozzarella. I start with a roux and it always turns out very creamy, even without baking. American cheese is just a step too far for me. I can't even have that in my refrigerator. I mean, what if I died? Somebody would find it cleaning things out and think I actually ate it. 😉

    I made this, used potato starch instead of cornstarch, mozerella instead of american cheese, left out mustard powder and parmesan and it was still delicious! :)

    I don't use a roux. I assemble it and pour milk in it before baking. But what I do with my noodles before assembly is I mix them with butter, cream cheese, and sour cream. That's how I maintain my creaminess. As for cheese selection, it depends. For holidays, I use things like Monterrey Jack, aged gouda, and Muenster. For family BBQs, I used pepper jack and smoked gouda. Both go great alongside my standard cheeses. But when it's a normal day, I like to keep it simple and use just my standard cheeses, which are sharp cheddar, mild cheddar, Colby jack, and Mozzarella. I try not to over season my Mac because I want the cheese to do most of the flavoring, so just a pinch of a dash will do. And my family loves my Mac. Especially my sister.

    Everytime i made mac n cheese it didn't turn out good. But this recipe helped me a lot with their tips! Some of the tips from this video that helped me:
    - Use melting and flavourful cheese
    - turn off heat before adding cheese
    - add all purpose flour or cornstarch with the cheese
    - when baking, make a lid with cheese over the Mac n cheese.
    - and def broil after baking!! It adds the crunchiness

      I like using Gouda cheese because of the flavor profile it adds. But please be mindful if you decided to add Mozzarella. Mozzarella will make the sauce more melty, and can get clumpy if you put too much of it in. I wish you the best with your Mac n’ Cheese!

    I love the combination of sharp cheddar, mozzarella & Parmesan on pizza. I’m not the biggest fan of just tons of mozzarella- it doesn’t have much flavour- the other cheeses take it to a whole new level!

    Butter, heavy cream/milk, egg, Gouda, Velveeta, Salt, pepper and macaroni noodles. Boil in chicken broth water to give noodles more flavor. Top with cheese. My recipe for years. Delicious...

    I love making Mac n’ Cheese. Please don’t use Mozzarella if your end goal is a silky sauce! It will make the sauce way more melty, and if you add too much of it, your sauce will clump and separate from the milk.

    You say to use block instead of pre shredded because they add stuff to prevent caking, but you added the cornstarch to your shredded cheese, which is what they add to pre shredded cheese to prevent caking. Your reason why not to use pre-shredded contradicts what you did to your block cheese.
    Pre-shredded: PASTEURIZED MILK, CHEESE CULTURE, SALT, ENZYMES, ANNATTO [COLOR]), MODIFIED CORNSTARCH ADDED TO PREVENT CAKING, NATAMYCIN (A NATURAL MOLD INHIBITOR)
    vs
    Block cheese: PASTEURIZED MILK, CHEESE CULTURE, SALT, ENZYMES, ANNATTO (COLOR), NATAMYCIN (A NATURAL MOLD INHIBITOR). The only difference is the cornstarch.

      @@marilynalvarez9951 It's not but that's the authentic "cheese product" used in mac and cheese. Plus there's sodium citrate in american cheese which helps with emulsification

    I’ve made lots of Mac and cheese from different sites claiming it is the best there is and yet the recipe was disappointing (personal preference, right?). I love Laura Vitale’s original Mac and cheese. This also looks good so I might give it a try.

      @le maison noire Most online recipes are over glorified. I recommend adding Gouda to the Mac n’ Cheese. I haven’t heard of the egg trick before, but I tend to make a roux. But I’m going to stop using a roux, because I find the butter doesn’t incorporate into the sauce well, and makes it greasier overall…

    Any other melting cheese options besides the three you offered. Velveeta and American are the worst for people that have a hint of lactose intolerance and the mozzarella seems melt in a weird rubbery & separate fashion. I use mozzarella but I’d like something else as a primary melter… so any other suggestion. The more the cheese is aged, the less it seems to affect the intolerant. My go to cheeses for all my meals are swiss, cheddar, mozzarella, colby jack, and muenster is my fave… very buttery flavor when muenster is melted.

      Cheddar melts fine. Three good cheeses together is Gouda, cheddar and pecorino, they melt fine and make a great sauce, add a little mozzarella to give it a stretchy consistency

    Making the recipe now! Kinda worried of the amount of pasta though. I’ll let you guys know what I think of the recipe!
    (Edit) I thought it was really good! But I was right about the amount of pasta. There needed to be about another half cup of the shells. The sauce was really good but it did not look like their version. Either they added really high quality ingredients, or they simply got a food editor to make everything look nice. Also add more cheese! If your sauce is looking rather thin add more cheddar. It may give the sauce more flavor if it tastes bland. And too much spice! Tone it down a little bit. I enjoyed the cooking process and the results, but it was not worth the effort. I recommend making it for a family gathering or any other special occasion. If you want to make homemade Mac and cheese please just do a classic stove top or a simpler baked version.

    Great recipe! I think its a little weird you tell people not to use pre shredded cheese because they have starch, then also tell them to add starch to it at the end?? I always use the pre shredded stuff and ive noticed the extra starch usually helps :p

      She said “additives” not starch. :) so cellulose (amongst other things).
