THIS WAS THE VERY FIRST DESSERT I EVER MADE AT 13 YEARS OLD/OLD SCHOOL LEMON 🍋 MERINGUE PIE 🥧

- OLD SCHOOL LEMON MERINGUE PIE
This was the very first dessert i ever made at the age of 12/13 years old
I learned so many different techniques and things as such an early age by cooking this pie on a regular basis
Its also such a nice refreshing dessert
RECIPE:
5 large egg yolks
6 Tbsp cornstarch
1 1/3 cup sugar
1/4 teaspoon salt
1 1/2 cups whole milk or water
1/2 cup lemon juice
2 teaspoons lemon zest
2 Tbsp butter
For the meringue:
1/4 teaspoon cream of tartar
1/2 cup plus 2 Tbsp white granulated sugar
5 large egg whites (room temperature)
1/2 teaspoon vanilla extract
In a medium-sized saucepan, add 6 Tbsp cornstarch, 1 1/3 cup sugar, 1/4 teaspoon salt, and 1 1/2 cups milk or water , and whisk to combine. Bring to a boil on medium heat, whisking constantly. Let simmer for 1 minute. The mixture will begin to thicken.
Once the cornstarch mixture has thickened up well (consistency of Cream of Wheat) remove from heat. Take a spoonful of the cornstarch mixture and whisk it into the beaten egg yolks to temper the yolks. Continue to whisk in spoonfuls of the cornstarch mixture until you've used about half of the cornstarch mixture.
Then add the egg yolk mixture back to the pot with the cornstarch. Reduce the heat to low and cook for a minute, stirring.
Remove from heat and stir in the lemon juice, lemon zest, and butter. Add to cooked pie shell
For meringue
Whip egg white until soft peaks
Slowly add the sugar and cream of tar tar until stiff peaks
Top on pie and brown in oven

Chef J❤,many of your recipes truly bring back fond memories for me. My mom would bake lemon meringue pies all of the time because it was my fav. After I left home, she’d bake me 2(1 to eat there & 1 to take w/me)every time I visited. I ate so much lemon meringue pie that I should’ve turned into a pie😂. My grandma Ida made wonderful pies and my favorite is probably lemon, tho in truth, what ever pie is available seems to be my favorite….. our meringue always would weep. I have never used lemon in it, plus I have never used the whisk attachment before either. I’ve used the regular beaters.

Good Morning Chef Jeff. That's also the first thing I made. I had just turned 10 and I like anything lemon. Lemon and chocolate were my favorite pies. I would make the chocolate pie for my mother it was her favorite and she for some strange reason çouldn't make it like her mom. Ever year for her Birthday. She has passed and I would give anything to make the chocolate pie for her again. God Bless You Chef Jeff....

The meringue slid away from the pie only because the edges of the pie crust fell, taking the attached meringue with it. That meringue was DEFINITELY attached to the crust. Your pie looks beautiful...!!!

That's a beautiful pie. My mom made a delicious beautiful Lemon Meringue pie when I was growing up. She taught me about whipping up egg whites. I can't wait to give this a try. Lemon pies always remind me of the lemon cream pies that came in a little box. And one time my oldest brother was at our house and I ate his and then put a socket wrench in the empty box to add weight to it like the pie was still in there.🤣 He didn't discover what I did until he got home and had poured a glass of milk to eat with the pie for dessert 🤣🤣🤣🤣🤣.
