Looking for help! I made the peach Preserves today and had a half jar extra left that I just put in the fridge, but it is good & cold now and did not Jel! I can't check the processed jars until tomorrow. If they all didn't Jel, can I open them all & put them back in the pot and add more Pectin, bring back to boil and re process them?

Could xylitol be used as sweetner instead or pure Stevia
