What I love about this channel is the adherence to the cooking fundamentals and more traditional techniques for optimal depth of flavour. So many other healthy cooking channels that I've seen don't explain these techniques and just sort of rely on sticking a bunch of low cal stuff in a bowl.

I know I still have alot to learn, but always trying to apply the knowledge I have into every recipe.

I added 6 tbsp of green chili salsa and a little liquid smoke, after trying this killer meal the way you intended. This has opened up possibilities.
I've done a simple pulled pork where i just throw a 2-2.5 lb tenderloin into a slow cooker for 6-7 hours then shred. One of the easiest lunch preps for the week i know of. But i need this mac in my life with it.
Bought the ingredients. Meal prep with 5 meals is perfect for my family of 5 😀👍🏼. Love your content and recipes. Just bought the recipe book for myself for Xmas. And for you, you deserve it. I’ve used a lot of your stuff and enjoyed it. keep’em coming.

Probably going to pair it with rice and baked beans instead of the mac. Will be a bit easier to reheat at work. Besides, BBQ bowl with beans is one of my favorites!

This is freaking delicious! I am not the biggest fan of pulled pork sandwiches (texture thing) but this was so good. Even my kids gobbled it up. Had to double the recipe and swat my kids away to meal prep. 🤣 BTW the pork is also amazing on a baked sweet potato with cheese and green onions.
You can also get an oven safe pan and transfer it to an oven to do the slow cooking step.

0:28 it's worth noting that those macros are for the meat itself, and most stores sell it covered with silverskin and fat layer (although you can find it perfectly clean sometimes), so if you want to be sure that you don't add extra 30g of fat to your recipe, trim it.
You should get a whole entire pork loin you can butcher it up into so many different cuts of pork, and in a long haul. It’s so much cheaper you can get a pork tenderloin about six or eight pork chops thick cut.and more
If you dissolve cornstarch in a bit of warm water before adding it never gets grainy
I would've applied the spice rub to the raw meat, let it dry brine, then sear, then slow cook. That way you can brine the raw meat and still sear it on all sides. But it'll be great regardless! Incredible content as usual.

Hey Nick, have you ever done any experimenting with PE Science Select unflavored multipurpose blend plus vital wheat gluten? I just got ahold of some and was planning to do a little. Was wondering if you already ruled it out as an option. My intuition tells me they should match well since one increases the gluten ratio in the dough while the other reduces it. All while increasing the protein. Plus I think protein powder will add lysine. Which gluten is low in.
I made some pitas last night using your recipe but subbing out 30g of flour with the powder. (36g flour/36 gluten/30g PE/ 24g oat fiber) The dough was a little delicate and sticky but tasted all right. Could make a good bread. But I think the ratio needs work.

I have, but it never worked in yeast risin doughs, at least by hand. The gluten would never form, even after kneading for 20+ minutes. I should be getting a stand mixer in a couple of days so I will experiment with it once I have it on hand. I haven't tested with non-yeast risin doughs (pita,tortillas, etc) and may work.

just an FYI sweet baby ray's BBQ has high fructrose corn syrup in it, quite a bit actually as it is first on the ingrediant list. i prefer Kinder's BBQ sauce taste great and no unwanted nonsense in it.

@@goldtvlive1017 that ice drink for my soda cravings. It’s sugar free, for chip cravings I replaced it with tortilla chips and salsa. And for bread. I eat strictly whole wheat. Minimal diary products. And sugar products under 5% is okay. But moderation, and cheat meals. I have a burger from 5 guys burgers and fries once a month. Lol

I really love your page man but i counted my stuff up on cronometer, im at 987 calories. i already made some and ate it (btw its fire) but my macros are completely different? Honestly should be fine since i usually just drink a smoothie for breakfast and can make a chicken burrito for lunch but could you check your macros once more and update ?

Is there some kind of advantage to slow cook this vs pressure cook? This would cook up real fast in the pressure cooker setting and the texture is usually even better. I’m going to try it right now since I didn’t realize you were slow cooking when I saw you using the pressure cooker and I need this ready in two hours from now. Lol.
I know that with beef, some people like the pink on the inside that you can't get with a pressure cook because of the temperature.

Y’all rly needa get his cookbook. I’ve made 10 recipes and they are all GASS AND SO FILLING. I’m very picky with flavors when I cook so usually when I follow recipes I change the amount of seasoning bc it never feels enough. I NEVER HAVE TO DO THT WITH HIS COOK BOOK. The best cookbook I ever bought. He rly does care about his recipes and cooking. Mans got the magic touch🪄

If you don’t use the buns you have wiggle room to put another slice of velveta cheese on the Mac when it’s reheated only puts you back 40 calories
Pro tip... since the meat fibers in Pork tenderloin run from end to end, the meat will be more tender and less stringy if you cut it into 2" sections after browning and before adding it to the slow cooker. Then you can avoid the chopping at the end. (●'◡'●)

Instead of adding cornstarch, have you thought about adding Sodium citrate? It will act to thicken and emulsify and eliminate the need for Velveeta. Great content!
70g protein per 600kcal is actually insane. I meet my daily requirement + still be in a deficit with just 2 of these.
I wanna add for anyone who doesn’t know:
DO NOT LET YOUR MILK BOIL. Do not start with the heat too high. Even if it doesn’t boil, milk can still curdle with too high of heat too quick.
If it does you’re gonna get sick.

This wont make you sick lol it will just be a weird texture
It's fine and won't curdle as long as you mix it frequently and start with cold liquids (water and milk) gradually heated up and you don't let it rapidly boil so keeping the heat mediumish.
The liquid boils the last three minutes or so, but with the constant stirring and perfect mix of water and milk, the milk doesnt curdle or have any other negative effects. Trust me, I have eaten this mac and cheese recipe at least 50 times because its so dang quick. However, if you prefer another method or recipe, definitely make it how you want and add it next to the pulled pork.
