We have done both frozen and fresh spinach. You get more flavor from the frozen spinach!

bdavis526 we mainly do other pork products like salami or pepperoni, we like to stick to cheeses as well.

Try pineapple w/ sauted garlic and onions. Add a little diced jalapenos for a bit more kick.

How do you keep the cheese from squeezing out while it is cooking?

Not much cheese comes out. The tenderloin is rolled and with the bacon wrapped around it the cheese stays in place pretty well.

Could I just chop the jalapenos and mix it into a bowl of cream cheese..then spread it on the pork loin..then roll it up?
