- Today I’ll show you the best Smoked Pork Loin Recipe Ever! This is a Southwestern Stuffed Pork Loin stuffed with hatch chilies. Started to smoke the pork loin on the Pit Boss Pellet Grill, but it overheated and shutdown, so I switched to a Kamado-style grill to complete the cook.
Smoked Stuff Pork Loin Recipe Ingredients
• 3 lb pork loin
• 8 oz canned hatch chilies
• 2/3 of a red bell pepper, chopped
• ½ medium red onion, chopped
• 1 tbsp chili powder
• 1.5 tsp cumin
• 1 tbsp smoked paprika
• ½ tsp black pepper
• 1.5 tsp ground coriander
• 1 tsp dried cayenne
• 1.5 tsp garlic powder
• 1 tsp red pepper flakes
• 1.5 tsp salt
• 1.5 tsp oregano
• 1 tsp onion powder

I have the same model PitBoss and it did the same thing. I just had to clean out the fire box real good and good as new. I love hatch peppers but can't ever find them around here, gonna have to use jalapeño's. I know that was good!

Great video Jeff! I will try that out without the cheese! Do you know what you just happen to you is what makes me think twice about buying a pellet cooker!! I think I might be sticking with my PBC or maybe look at the brand new PBX. And then run back to the Discada. Speaking of that, I would love to see you do some more cooks on your Discada!!!!
Thanks David.. It seems to only happen with this Pit Boss. Does not happen with my three ASMOKE Pellet Grills. For some reason the Pit Boss requires more cleaning out of the fire cup. You clean it out and no issue. With that said the PBC is a great cooker and avoids these issues just like you said. I do need to get that plow disc out.

Thanks Joe.. Some recipes come with on our own. Some variations of others. See some recipes, get an idea then make our own. The chicken from last week was a twist on an existing recipe from the Pit Barrel Cooker website.
