- Fogcrawler’s Old Fashioned Soft Black Licorice
(For an 8” or 10” Camp Oven)
Ingredients:
Reduction Mixture
1 ½ cups water
2 tbs. licorice root, crushed
4 star anise, crushed
1 tbs. anise seeds, crushed
1 tbs. fennel seeds, crushed
Remaining Ingredients
½ cup concentrated liquid (from reduction mixture)
2 tbs. gelatin
1 ½ cup unsulphured blackstrap molasses
½ cups sweetened condensed milk
1 tbs. licorice root powder
1 tbs. licorice root extract
1 tbs. anise extract
1 tbs. olive oil
¼ tsp. kosher salt (optional)
black food coloring (5-7 drops)
¾ cup soft wheat flour
¼ cup soft wheat flour (for dusting)
Directions:
1. Add ingredients for the reduction mixture into the oven and simmer until liquid is reduced down to ½ cup. (About 20-30 minutes)
2. Remove mixture from oven and strain to remove particulate matter. Add the cooled concentrated liquid back into the oven. Sprinkle and stir the gelatin into the concentrated liquid and allow gelatin to soften.
3. Add remaining ingredients into the oven, except the flour and heat to 240° F, using a candy thermometer, stirring the boiling mixture constantly.
4. Remove oven from the heat and stir in the flour, using a small sifter.
5. Transfer the hot licorice into a parchment paper lined small baking dish, allow it to cool.
(Place into an ice chest to speed up the cooling time)
6. Transfer cooled licorice to wax paper and dust with additional flour. Slice licorice into strips and then cut into bite sized pieces.
7. Enjoy!!! - Jak na to + styl
finally a black licorice recipe that actually uses licorice. Almost thought id never find one
Glad you found this one, Michal. OCIC
Exactly my thoughts!
Since Y&S stopped making black licorice cigars I have been looking for recipe. This sounds great and I can't wait to try it. Thank you
You are welcome. I hope you find this to your liking. Let us know how it turned out. OCIC
This kind of reminds me of those old pre-work videos they have you watch your first day at work. I love it though, that's not an insult. I love those things lol I find them interesting.
This was one of the most interesting videos I have ever seen. Great video!! Thanks for sharing the making of my favorite candy! Love from Texas!❤️
You are welcome, Debbie. OCIC
Great ingredient profile, rivaling the old Panda Herb Licorice in the green box which seems unavailable now. My absolute favorite being gone, I've turned to making it myself. Fantastic video that's a godsend to me. 50 thumbs up!
Wow! Thanks for the 50 thumbs up, JJ. OCIC
Did u try it?
@@zoenova5617 Honestly I had a mad licorice craving during the summer, but in winter it's gone away. Maybe this year ;)
I think this is the most wholesome video I have seen on the internet.
Thanks, Mitch OCIC

Thank You... We were extremely pleased with the results.
This was by far the best recipe I have seen "over there" ... almost as good as the real liquorice salmiak ...
Funny you say, "over there" because my research here, took me, "over there"... lol
Thank You for such a nice compliment!!!
It looks so good I’ve never had homemade thank you

Brilliant use of an Aeropress!
Thanks, Sean.
OCIC
Excellent recipe, thanks for the video. Can almost smell it!
Thanks for watching!
@@outdoorcastironcook You're welcome! Also forgot to mention, good use of the Aeropress. I have one and it makes fantastic coffee, and makes a good strainer as you showed.
Me too ! I hate anis ⭐️ wonder if I could make it without or replace it with other herb.
Interesting and good video. Keep it up.
Thanks so much!

Drooling in Texas! Hats off to both

Licorice the way you made it was healthy and real licorice powder good on you and thank you from London UK 🇬🇧✌🙏
You are welcome. OCIC
We have seen quite a few recipes for black licorice but this one seems the best, looking forward to trying it.
Let us know how you liked it. OCIC
I like it
Wow I like licorice yummy
So good
I was down at my Asian grocers in Australia and came across licorice powder, it gave me an idea about making an ouzo type drink, but I had no idea about the powder and here I am to find out about it. Nice recipe I might give it a go and it gave me plans on my drink, thanks.
Interesting! Let us know what you make. OCIC
@@outdoorcastironcook The plan is to infuse a homemade vodka with star anise, anise seeds, licorice root, cardamom and a little vanilla.
I'll make a sweet tea with the powder and a little glucose to cut it down to 40-45%.
I'll let you know in about two weeks time if it turned out alright, I'll base the amounts loosely to your recipe.
🤞
hello and thank you for an informative video
You are welcome, Gwin. OCIC
Very good too much hard work .Thanks 🙏🙌🙌💛🍀🍀🌹
Most welcome 😊 OCIC
I bet that just smells amazing....
Such a time honored smell, takes me back to the penny candy days...lol :D
Love you videos
Thanks for the FEEDback

@@outdoorcastironcook is the food coloring optional or essential ??
I wonder how quickly it turns hard if we let it go past 240? Otherwise, thank you for this great video. Its by far the best on the internet. All others start with butter, sugar and ACK CORN SYRUP! Yours I will make.
It sets up rather quickly, as long as it takes to cool.
That is the healthier version..love it
Thank You for noticing, sad to say. many would be content with the corn syrup variety.
Great video. I love liquorice, never tried homemade liquorice tho.
Give it a try and I am sure you will love it x 2!
OCIC
I can't remember the last time I ate real licorice...I am so going to give th is a go...cheers.
Enjoy!!!
Natural / and with licorice root / Licorice isn't licorice unless it contains the ingredient , great job and im going to follow this recipe , thank you so much for posting
You will not be disappointed... Something worth noting, if you prefer your licorice more on the hard side, instead of soft, just take the heat up a bit higher when cooking it.
I like to lightly toast my spices in a dry pan just until I can start to smell them before grinding in the mortar and pestle. It helps release some of the oils and flavors.
Great tip!
А что это ?
Other than that, I believe this recipe is probably the best I’ve seen yet. I would love to try a piece of this licorice
Good to c this.
Thanks
Happy trails!
Thank You!!!
Amazing video, njam njam
Thanks for your + comments, Kristian. OCIC
Hey great video one tip is to use a silicone spatula your get more out your pot and won’t make that annoy scratch noise
Thanks for your suggestion. OCIC
We call your licorice root cuddy root lol. Great recipe will be doing it as soon as I get ingredients together x will let you know how I get on .
Eleanor, call it whatever you like but let us know how you liked this version of the recipe. Joanie & Dean OCIC
Since this has many herbs, I thought It share the old Panda green box licorice herb list: peppermint leaves, shop vervian wort, orange leaves, marsh mallow root, glycyrrhiza glabra, blackberry leaves, plantain herb, thyme leaves, torch weed flowers, lungwort leaves, elder flowers, milfoil flowers, iceland moss, sage leaves, star anise, mallow flowers, primrose flowers, red poppy flowers.
Thanks for sharing, JJ. OCIC
Interesting ingredients list for candy, right?
No wonder it was truly intense! I 'm almost set to make this recipe but I still need to buy more blackstrap molasses 😂
I love this!! We should be able to make it with chia seeds. I will not use any sugar, only Himalayan salt. I love salty licorice. 🤪😍
Sounds great! OCIC
How did no sugar work for you. Did you use molasses?
liqourice/licorice wood we call it 'sweet wood" in the netherlands. you can buy it to chew on 2.
Great video! Does this recipe hold the shape you cut it well? Or does it tend to spread over time?
The more heat you have on it when it cooks, the harder the licorice sets. It hold its shape well.
Dean
Great video. Do you have the recipe and units written out somewhere? Scrolled through the comments but couldn’t find it ... thanks from Indonesia
In the description below the player, expand the text.
Great video thank you! Can i ask how can i make it salty??
add salt?
Great recipe and uses real licorice root. Does anyone have a suggestion for substituting the flour?
You need the flour as a thickener, so you could substitute another thickener like powdered elm bark. Flour also is used to "dust" the finished pieces so they don't stick together. OCIC
Looks like a real Australian recipe. Been buying mine at Tractor Supply or Amazon. Too lazy to make it; and I don't eat a lot of it anyway.
"Reduction Mixture" -- reminds me of college chemistry LOL
Hope you enjoy this recipe. Just tried some from Sweden that included ginger in it. Awesome! OCIC
Why do you use extracts since we made the concentrated liquid at the beginning?
Can i skip them?
More flavor...
Can i skip them?
Yup...
Behind the redwood curtain, making licorice like a wizard wood. No powered utensils. Gotta love it.
So... could a person use cocoa powder instead of licorice root to make a chocolate chew? Hmmm...
Don't know.....but then it would not be black licorice :) OCIC
like from ksa
Very nice video- everyone in the family adores black licorice except my dad so I totally wanna try this.. in sourcing ingredients, curious about what kind of licorice extract you used? All I’m finding is like.. health store kind..? Not traditionally used for cooking.. or the lorann flavoring but that’s not an extract.. help? :)
The health food store type is fine... I also reduced licorice stalk over the stove to get my own "extract". The trickiest part of this recipe is the peak cooking temperature. The higher the heat, the harder the finished licorice will be.
Awesome, thanks! I make divinity, fudge, English toffee and peanut brittle at Christmas time so I’ve had a lot of practice with candy thermometers :) still freak out every time I make divinity- my grandma passed about 15 years ago but I swear she’s with me hovering over my shoulder every single time I make it, making sure I don’t botch it :)
dang that is intense
Yes, it is.....and today I tried soft black licorice with ginger. Excellent blend! OCIC
OMG 😲
Thanks for the recipe, but I was wondering(for foreigners) is there any good to replace the "phured blackstrap molasses"?
Order online here: www.zoya.bg/en Good quality, speedy delivery & cheap.
Yes, absolutely. Try a source on line.
Great video. Can we replace the molasses with another product? since i didn't find it near me. If not, can you tell me what is made of?
You could substitute corn syrup/sugar for molasses, but our choice would be to try and find some molasses. Molasses is commonly made from sun-ripened sugar cane (ours is this kind) or sugar beet juice. This is boiled down into a syrup in which the sugar crystals are extracted leaving the dark liquid (molasses). Molasses can be made from sorghum, pomegranate, carob, and dates. We hope you are able to located some and will try this recipe, Rony. Joanie OCIC
I found molasses and i did the recipe and it tastes so good but the final cooling process was disastrous. Can we cool it down in the fridge? or it should be cooled with the room temperature? and how much time it takes to cool down?@@outdoorcastironcook
We have done both methods of cooling, and putting it in the ice chest worked well. Resist the urge to move it around too much while it is cooling, and we found that a firm plate works best. It should cool for at least 1 hour. Glad you were able to find molasses, Rony. Joanie OCIC
Also, review the webisode at the 13:30 mark to see it turned out on the board, with wax paper, and rolling pin. The first time we made it, it turned out stickier than intended, but was still tasty. OCIC
Lovely, I will try it for sure as soon as I find licorice root somewhere here in Mexico! Anyone has any tip for me where to find some, pls?
Try your computer, or ask around locally at any Farmer's Market. OCIC
@@outdoorcastironcook thanks, but it is not commercially sold here not on markets or stores (most of the people are not even familiar with the flavor or even recognize the name), I can always order from ebay I was just wondering if anyone familiar with Mexico City might know a local source since ordering from overseas is rather expensive because of the shipping.
You can find it on Mercadolibre. I'm Mexican too and I found it there. Shipping is cheaper.
@@jafetalanisruiz5120 Thank You!!!
Could you make this 'gluten free' using buckwheat flower?
I could not say yes, for sure, but I believe a gluten free flour would work as I've used different types of gf in other cooking/baking successfully. Joanie OCIC
Honestly uou would think you could find licorice recipes that uses the root! Just planted 2 plants this year can’t wait
Good to know! Hope the plants prove fruitful. OCIC
This is work. Is there a faster recipe?
Tried a few different ways, Sam. I was going for the one recipe that was best like old fashioned licorice of decades ago. For me that meant a quality tasting one, with low sugar. Yes, you can make it faster if you use corn syrup, but it is much higher in sugar.
Dean & Joanie OCIC
Why is everything I love in Humboldt county?!
Maybe because it's all about being behind the Redwood Curtain?
Followed recipe to a "T" but could only get the temp up to 223. Result tasted great but was "fudge" texture (waaaaay too soft). Will that extra 17 degrees make all the difference, and... how long at 240?
The extra degrees would have helped.
If you're wanting a harder licorice you will need to take it past 240...
On a brighter note, at least you got to enjoy the taste of how good it is, without all the sugars and corn syrup.
@@outdoorcastironcook Going to retry soon. Thanks!
Was that flour you put on at the end or confectioners sugar?
You can use elm bark in powder form or flour. They used wheat flour
Hello ma'am or sir
I just want to know how many pieces of licorice candy can I make with your measurement??
With the size I demonstrated about 40 pieces. Cut sizes can vary. OCIC
Gracias!! Thanks..!!
Enjoy!... Your Welcome!
Authentic black licorice is very good! All the American style licorice we are familiar with are not actual licorice. Not to say I don’t enjoy Hershey’s twizzlers on occasion lol
Been guilty of eating the corn syrup stuff a time or two... lol
👍🏻
Thanks OCIC
You're Welcome!
Do you sell the finished licorice? I'm from Melbourne, Australia.
Nope... We give it away. lol
are licorice root, anise seeds, star anise, and fennel similar to one another in taste, flavor, and pungency?
Only a subtle difference...mostly when you smell them. OCIC
They all have a licorice-like tastes and used to stretch the more costly licorice root. If you use a good quantity of licorice root, CRUSH the roots and steep the "tea", there's no need for icky anise and fennel. Also, gelatin is not used to make classic black licorice, nor milk.
@@magnificent6668 Anise really helps round out the flavor, as does fennel. Panda green box 18-herb licorice was epic. Matter of taste perhaps but I loved that stuff (seems discontinued though).
The bears are thinking, oh boy!
As long as they only think it and don't show up to heat it. OCIC
How was the cleaning process With the remaining residue
Easy... Hot water.
Good to know it’s easy clean up. Figured had to use some elbow grease with it being a very sticky vicious looking concoction
were can a person buy liquid licorice extract ?
Here in my neck of the woods, I've seen it at the local health food stores...
Douglas Magil
u legind thx
OMG
Will give this a try - But I don't need the food coloring.
Hope you get results that you like. Let us know how it turned out. OCIC
What is the name of that press that you use?
An Aero Press, used for making a cup of coffee...
What kind of press is that at 06:00? Couldn’t quite hear
This is an AeroPress which is used to make my coffee. It has these small round paper filters that just pop right out and can be disposed of quite easily when doing making coffee...or in this case licorice. OCIC
@@outdoorcastironcook Great, thank you very much for coming back to me. Funnily enough I cooked this recipe yesterday for the second time. My dad loves it and I am pretty sure he hasn't had real liquorice like this for many years. None of the shop bought stuff seems to even have any in it these days :-D The two most challenging bits seem to be getting it hot enough without overdoing it and straining the extract liquid. I tried a cheap French press coffee filter but it didn't work very well. The aeropress style filter you mentioned and used in the video seems like it would work better and so might help for next time. Thanks again.
If i dont have gelatine can i leave it out?
Yep... What you will need to do, is take the cooking temperature up a tick.
Guesstimate xS, amazing xD
How much molasses?
1 1/2 c. u.s. molasses.
OCIC
How much Flower?
To view the recipe check on the Show More below the video description. OCIC
Grandma called it letting it bloom.
Same thing when you first pour water over ground coffee....let it bloom is right!
