How to Make Handmade Flaky Rough Puff Pastry Apple Pies

- What’s better than a rough puff pastry recipe? Two of them! And that is why we’re finishing the year off with another rough puff pastry treat. If you tried my previous rough puff pastry recipe you know that it did not contain a lot of sugar, but it was still quite sweet. We achieved that by brushing the pastries with sugar syrup after baking.
I wanted to keep the same (low sugar) theme in this recipe. The apple filling is not very sweet and the only sugar in the pastry is the sugar that is sprinkled onto it before baking. The result is a slightly tart, sweet, and flaky apple pie flavoured with fragrant spices.

I don't know how you keep so thin but I am afraid to do most of the sweets because I will get fat LOL But this one and Brioche are part of my NY task.

I can see a lot of savoury variations on this hand pie, such as Indian-flavoured vegan filling, minced lamb curry filling, and my friend’s incredible Peruvian empanada filling w/ minced beef, olives, green onion, raisins, egg wedges, chili pepper, coriander, spices, etc.. Yay - apple pie!!!!!
I place my flour and salt mixture along with any utensils in the freezer until I am ready. I prefer to large grate frozen butter and put it, also, in the freezer until I am ready. Lay the butter out flat in the freezer to avoid it solidifying completely. Break it apart gently when making the dough. A little bit before starting the dough, I put my water in the freezer and take it out and start the dough when the water is, literally just about to freeze on its surface.
Pre freezing works exceptionally well for tempura batter and pie dough.
Shortening works far better for achieving flakiness, but I think it’s gross to cook with so I mostly use butter. Sometimes I use half shortening and half butter. I also pre freeze shortening in the same manner.
Nice to see the Chain Baker classic "rough puff" in action with any dessert but I feel it shines with apples especially. I have also begun using cardamon in this last month, implementing it into my holiday baking. I didn't make pannatone this year but the card' is a game changer in the spice cookies i made!😊
I've had very good luck with your palmiers. With the standard cinnamon sugar and cardamom filling, they have made some great impressions at holiday gatherings. The possibilities are endless with the filling. Never considered making pies. Someone in the comments mentioned pears. Good idea! That's why I follow you!

Never made rough puff, this will be my first, I have apples I was planning to use in a French tart but these just look too good!

My husband ( and me 😉) will really love these. My baking list is getting longer.
Saw a recipe for a sweet focaccia. It was more like regular focaccia with a sweet topping but it's an interesting idea. A glaze could be used or perhaps throw on cinnamon and sugar at the end of baking and broil it.
Another option - omit the sugar topping, apply an egg wash before baking and then pour a glaze made of icing sugar/water (or milk) after it has cooled. I haven't tried that yet - I will for the next batch - maybe tonight 😉

Hi ,your videos r informative i have a question if i make bread with wholewheat and barlay flour can i add yeast and baking powder and vinegar to make it soft and fluffy like store baught bread.

@@ChainBakerthanks for getting back to me and so quickly. That’s really helpful and explains why the apple pies were very flakey and hard to work with as I used plain flour. I have now tried 4 of your recipes including this one and they have all come out amazing even though I have made mistakes. I have also learned that I have been making bad mistakes for years such as using sugar in yeast, not enough salt and not considering the dough temp. Your videos have taught me that baking is literally chemistry :)

It depends on the recipe. If the rye portion is small you can just replace it with some whole wheat or whole grain spelt. If it's a 100% rye bread recipe, then just make something else instead.
I definitely need more sugar 😂. I think I will add a few giant salt crystals on top, too. Maybe some kind of liquor with the apple...

I tried this recipe this evening, and they’re still in the oven baking, its been about 40 minutes and still not finished. It seems like maybe i rolled the dough too thick, but they sure have puffed up and super flaky!

What is that spatula you're using in all your videos? Appears here at around 3 minutes.
It's a dough scraper. The one I use is made by a company called Vogue. But you can find them anywhere for just a couple $
I feel abandoned., waiting for another bake. Fine. I’m baking a 50% rye bread with honey and anise seed, this one will not have fermented malted rye as I am trying a light rye bread. The honey and anise is currently undergoing a bulk ferment with sourdough starter to create acidity, and the smell is awesome.
