- This episode explores a different take on Mediterranean cooking with the rustic delights of Maltese food. Chef Paul Camilleri goes through the essential ingredients, and then cooks his family recipe for the national dish of rabbit stew. Then it's time for the national snack food, pastizzi, and the national sandwich called Hobs Biz Zeit - tomato paste on crusty bread and topped with anchovies, capers and olive oil.

My dad is Maltese and ever since I was a kid, he added peas to EVERYTHING. Can a fellow Maltese person help me understand the Maltese obsession with putting peas in everything?
not maltese but been living here for a year now. its cheap, nutritious and can be grown here
My Dad always adds peas to his sauce! I grew up like this too. His family is originally from Southern Italy.
My mum always added peas to her spaghetti sauce.

Me toooo ...👍👍😊😊😁😁😁
Be great to get some or recipes as with other great show like all SBS programs The Cook and the Chef
our kitchen is amazing wish to taste how you australians cook our food
They usually mess it up with fusion cuisines etc. ending up with a huge mess that they think taste good but is an insult to the actual cultures that the dishes represent. If a non Indian Australian says he/she made an Indian curry just run away.
I like the soups
Nice and good food with a great taste😘😘😘🎁🎁

Pudina ... not Puddina . Having said that ... Maltese in Australia tend to stick to tradition way more than we are doing here. Makes me sad in a way. So much tradition is being lost with every passing generation.
its because most of our grandparents who came here weren't allowed to speak maltese or really celebrate their culture...im 3rd generation maltese and Im unfortunately disconnected from my cultural roots.
Arab influence
Poor rabbits!
The chef had horrible pronunciation of Maltese! I'm half Maltese and find a lot of Maltese Australians really obnoxious when they come to Malta .....
