    When I was in Saigon, one of the many dishes I wanted to eat was bo kho, or Vietnamese beef stew. After doing some online searching, thanks to Eating Saigon (www.eatingsaigo...) I found a restaurant called Bò Kho Út Nhung, and since it was near to many other restaurants I was eating at in the area, one evening I stopped there for lunch.
    Bò Kho Út Nhung was a small and home style restaurant, tucked off the main road into a neighborhood down a side street. As soon as we arrived for our bo kho meal, we were greeted by the owner, who was extremely kind and friendly and she made us feel warm and welcome. There were a few tables and chair a few stairs up in the main area of the restaurant, and there were also a few tables lined up outside along the street-side. We chose a table along the street, and it was a nice quiet and friendly place. There were two main ways we could order the beef stew, served in a bowl with banh mi, or baguettes on the side, or served over the top of a bed of noodles - in this case I think yellow egg noodles were one of the most popular choices. I decided to order the version with bread, and Ying my wife decided to go for the version with noodles on the bottom.
    The pot of bo kho was sitting at the front of Bò Kho Út Nhung, sort of along the front of the street, on display for everyone to stop in for a bite to eat. I could smell the beef stew as soon as I came around the corner - and I knew I was in the right place - not to mention my hunger grew! The beef stew came with big nuggets of tenderly stewed beef, along with some big chunks of carrots, and whole shallots. The gravy was a little bit tangy, and it was perhaps a tomato base, but it wasn’t very strong tomato - just very light. But the gravy was rich and soothing, but unfortunately the version I ordered was way too greasy with too much oil floating around on top. Anyway, the beef was extremely tasty, and my favorite bites from the bowl of bo kho were the shallots, which were stewed until extremely tender, and when I took a bite, they just melted in my mouth, and burst open with the juices of the stew.
    What I loved most about the Vietnamese beef stew is that it was served with all the extra garnishing herbs and vegetables that Vietnamese cuisine is so well known for - sawtooth coriander, cilantro, sweet basil, and Vietnamese coriander, as well as lime wedges, and some extra sauces for more flavor. To me, the extra herbs is what really makes Vietnamese street food so good, and I really liked them along with the bo kho.
    The bo kho served with egg noodles, although I didn’t show it on this video, was actually better than the version I ordered that came with bread. For some reason, the egg noodle version included very little oil compared to the version I ordered which was much too greasy. In any case, it was a great experience to eat Vietnamese beef stew at Bò Kho Út Nhung, and the owner was extremely friendly as well.

    Hey Mark, my Vietnamese friend taught me to squeeze the lime into the salt and pepper, then dip the beef when eating Bo Kho. I highly recommend that taste experience!

      Thomas Mon I agree to an extent. I don't know how easily one would find mozzerella bread in around as the cheese would be a bit mor italiano. but a piece of bread is about as old as recorded history from what I have seen. IThe oil is even great while cooking. However, nothing wrong with skimming a little with the serving. Lean meat is just that. Like in the french and elsewhere browned butter ads a robust flavor texture as I am fairly confident we need fat for the flavor of cooking delicious meats with a robust dish. That bread and oily beef?...can I order one? I am american white boy but it looked like what my boss would offer me and I never said no ;-) Rus-sian breads. Africa?? I just wonder nowadays what really tastes bad unless it is completely decomposed LOL.Peace

    I find it strangely satisfying watching you eat, Mark. Maybe it's the awesome facial expressions you make after each bite lol. I guess I just like watching people enjoy eating their food. Anyways, it's cool to see that you've eaten almost every well known Vietnamese dish so far during your visit. If you haven't already tried them, here are a couple of dishes I think you'd really like: Thit Heo Kho (Braised pork belly), Canh Chua Ca (Sweet and sour fish soup), Cao Lau (Special noodles with pork, fresh greens topped with pork crackling and spicy sauce) (only available in Hoi An unfortunately). Keep up the great stuff, dude :-)

    The way i eat this is put herb, chillis, lime and use the bread to dip in the sauce or broth, let the bread soak in the sauce then enjoy

    The bread is dry, and the beef stew is for dipping the bread. This way you can get the spicy of the stew absorb by the soft part of the bread, and the crunchy of the bread skin still there. I don't put the meat on the bread. I just break the bread apart and do a quick dip into the stew and eat it like that. I use the spoon to scoop up the meat and other to eat along with it.

    If you are in District 1 go to Pho 2000 and have their stew/pho dish.... they put pho noodles in with it and it is amazing. Its 50% pho, 50% french stew. One of the most delicious things Ive ever eaten.

    I’m in Saigon. I’ve been sort of struggling to figure out how to find egg noodles… I usually get it with bread bc, although I like rice noodles, I prefer the Hồng Kông wheat/egg noodles (mì?)
    When I lived in Thailand it was easier for me to sub noodles, but I’m finding it more difficult here 🍜

    This is different from normal bo ko, greesy version or new one, i never seen it yet but i do love bo ko, u can eat in variety ways, bun, thin or thick rice noodle, or france bread lik we this one too.

    You are a good sport Mark. Have you ever had Perpetual stew? It's said that a restaurant in Bangkok serves a soup from a broth that has been cooking for 45 years and is replenished a bit every day. I don't know the name of the restaurant so you will have to find it. I hope to see your review on that soon.

    How do stay thin with all the carbs you eat Mark? Do you do lots of exercise, don't eat a lot the rest of the day, or are you just lucky? I would get so fat! I wouldn't be able to stop eating if I travelled from eating spot to eating spot! ;)

    I'm Vietnamese. The good "Bo kho" usually doesn't add that much oil. It mostly would leave people sick feelings after eating it. So watch out the amount of oil before you make it.

    Mark, you have to try Thịt bò nướng lá lốt (aka bò lá lốt), it is beef wrapped in betel leaves and grilled on a stick, and can be eaten plain or served with some thin bun (noodles). I think it smells amazing!!

      Oh god lol let me try with my Saigon accent... I suck at finding examples.
      Thịt - tit (to make it appropriate, think tit for tat)
      bò - bo (as in borrow)
      nướng - I really can't think of anything for this one at the moment.... scratches head*
      lá - the "á" is pronounced similarly to the "a" in the exclamation "ack!"
      lốt - like "lock" but said with the tone of a question, and the hard "K" sound is silent.
      Although I suppose you don't even need to say the whole thing; bò lá lốt works perfectly fine.

      ***** it's pronounced as Tit Bor Nu-ong̣ (Nu and Nong quickly combined together) La (as in la la la) Low-k (as in Low but you add the "k" sound).

    a good bo kho should have hints of lemongrass, cinnamon, star anise and just a touch of heat from chilli. I like mine with tripe in addition to the beef shank which has been braised under it's fall apart tender

    your stew was more fatty due to the french baguette combo. you use the baguette to soak up the fat. had you ordered it with pho or mi (egg noddle). then they would have skimmed the fat off for you.
