      Mary, I just had a thought: some today do not know how to wash meats, cut them up for various puroses , nor store -so they won't spoil (freezing, wrapping, canning...) Also, washing and trimming the veggies...I know, this is truly basic, but several women in my life say they can "cut up a chicken" which to me includes adequate prep of any poultry. Meats such as roasts steaks and more. Cleaning, prepping and storage...I realize you cover a good bit of these, but more ideas! Ty again, sweet friend!

    Thank you Mary! My mom was a working mom and never showed me how to cook. She rarely cooked. As a homeschooling homemaker, I have been learning so much from you about how to cook nourishing meals for my kids. This is really going to help cut back on our $300 bi-weekly grocery budget!

    moving to a traditional kitchen is not expensive in money. But it does require time and energy, but it is totally worth it. When I got married in 1978,we were living on so little. I read Julia Child's Mastering the Art of French Cooking from cover to cover, and learned how to blanch vegetables and brown bones to make stock and carmelize onions. Making your own cookies and snacks takes time but it's cheap. and healthier. Learning to chop up a whole chicken is worth it. I can buy a whole chicken for $.97/lb, but you have to learn to carve it and be gentle to yourself while you are learning all these things.......it takes time but it doesn't take a lot of money

    Hi Mary! Finding you is becoming a life saver. I grew up and learned to cook in the midwest, meat and potatoes, cream of whatever soups etc. I am now a stage 4 ovarian cancer patient and need to change my eating habits to support good health. I am a hobby cook and am enjoying this tremendously. I'm learning something new at age 54. God bless you!

    My mother who had a large family always showed us how to be thrifty in the kitchen, when she had to make a meal stretch or be creative with limited simple ingredients. So I inherited that gene. In fact I thoroughly enjoy finding few simple ingredients in the pantry and making something creative, which always turns out delicious, as meals prepared for family with love, will always turn out good!

    I so appreciate all your food and cooking information. I don’t know your training/ education but I think we have the similar background in foods and nutrition. Now, 40 years later, I’m studying for a certificate in Functional Nutrition and I recommend your videos and website to my clients to help their transition to eating more home cooked meals.       I haven't gotten any certificates, but I was just thinking this would be awesome for the nutrition group I'm in, although it's very low carb eating, the lessons you give us, Mary, also work for what they teach me: eat whole foods (meats, poultry, fish, vegetables), not processed "diet" foods. They also encourage us to make our own dressings and seasoning mixes because of all the extra, unnecessary ingredients. Plus, even though I don't eat bread, pasta, etc, my family does. So I can still use other tips in my house. Thanks so much, @Marysnest!!

    Thanks for the helpful tips, Mary. I was so determined to make my own Mayo, but all I had was our chicken eggs. I’m pregnant so I figured they should be pasteurized so I googled a few resources and learned how to do it at home 😂😂 I never would have done that a few years ago. You’re a big inspiration! I love your sit down videos like this! Going to get Nourishing Traditions at the library this week 🙂👍

    There is a restaurant I would buy take out from. The food was cooked daily and fresh. We didn't do hay often but the left over chicken, Spanish rice and beans, including the salad and plantains were turned into the most delicious soup the next day. I never needed to add seasoning as everything was well seasoned. I would eventually do that with homemade foods as well. When I was fifteen every Saturday all the left overs from the week, and they were always homemade, would be heated up on Saturday and laid out like a buffet. It was special because everyone got a little bit of everything

    Mary, thanks for all the good ideas. Decades ago I used to buy and cut up whole chickens. The breasts, legs and thighs would all be frozen for their specific recipes. The backs would go in to a gallon zip loc bag. When I had two bags full, that would be enough for me to cook the backs and use the meat to make chicken barbecue to be served over rice. In those days I, too, had a soup container in my freezer for left over veggies. When it was full I'd make a pot of soup. Cooking is so different for me now that it is just us two old farts at home!

    I love to take leftover chicken and ground beef, and slow cooking them together with taco style spices. We put it in salad, or on a tortilla, or I sometimes freeze it. It warms up well, freezing it doesn't alter the flavor, and with my health issues, it leaves me with a good base to build on when I'm having a difficult day, or we're busy.

    Dear Mary, There were so many of the raw materials for these ideas already in my tiny kitchen. Breadcrumbs, leftover chicken, a large glass container with a sealed top that your list made me realize I could use to make my own polish Sauer kraut. (run-on sentence) Thank you for these tips. You are such an inspiration! (p.s. I agree about the 1/2 an onion thing in recipes! - like, really?! lol) Keep teaching. You're an amazing lady. God bless you.

Since home economics was taken out of America’s schools, most young people cook with the microwave, eliminating the joy of cooking!     Loving your videos! I've learned a lot watching them. I've been collecting cookbooks for about 60 years. My cookbook rule is that it must contain real food ingredients, not a can of this or a box of that. I love the real foods that can be made from the garden!

    First off, THANK YOU Mary for speaking a bit about what a traditional foods kitchen is!! That really helped me understand better, and I am thrilled to report I am a traditional foodie! I had no idea. Also, I thought it was just me who saves a freezer bag of scraps for bone broth! Always awkward to explain that to friends who see it. Btw, I advise not to put anything cruciferous in that bag. Cruciferous vegetables really create a foul-tasting broth (I learned the hard way).     Hi Mary! I really enjoyed this video! Bottled salad dressing ( and bread that didn't get moldy) were the first things that really spurred what I call "my identifiable ingredients" diet. I also am glad to see that you also do a "weird random leftovers day" ! During last years' shortages at the supermarket, I made a no waste policy at my house, but I have found myself slipping, this video has reminded me to get back on track.

    I now live in an apt. So, cannot do a lot you show. But, I have tried Ice Cream no machine with a lot of success. So, I tried how to make cottage 🫕 came out ok. I have been eating a lot of scraps. Also have made brown sugar,.So, I am able to do some of your videos. Make my own Mayo. Have made that many times. Love your program.

    Making a stir-fried rice with veggies, herbs and proteins you need to use is another way to mix things up when you nees to use leftovers & other things (like veggies) you need to use up. I also sometimes add egg, tofu or beans if I need to add more protein.
    Over the past years I started to always keep soy sauce, mirin, miso, dried red peppers, sake and a few other Asian condiments & spices on hand. They all have a long shelf life and are a great way to add more fermented foods to your diet - and also let's you enjoy a different flavor profile.

    Might I suggest when you experiment with recipes - substitutions, quantities, method - write down what you put in the pot, or the over, and when the dish is served, note down what worked and what didn’t.

      Hi Garry, I try and make a recipe verbatim the first time only. After that I take great pleasure with the substitutions as long as I get close to the way the dish is supposed to taste, unless I just want to use the recipe as inspiration and have some fun with it. Give yourself permission to make one substitution, it will take time I’m sure, but it will give you so much freedom eventually. Good luck, I know you can do it.

      @@hume6900 Hey Marion. Thanks for the encouragement. It takes a great deal more to feel alright with a deviation from a set-out instruction. I have to be sure something will not be too adversely affected, from my not adhering to what was already set-out.
      That takes a lot of extra brainwork. I envy those who are able to 'wing-it'.

      @@gk6993, you’re welcome. I understand more than you think and I know you can do it. It will take time. Start with a recipe your comfortable making so you know how it tastes, maybe a roast chicken and pretend you are out of an herb or spice you normally would use like poultry seasoning. You have some celery salt and a lemon. Cut the lemon in half and stuff it in the cavity of the chicken, omit regular salt and add the celery salt to your other spices and rub over your chicken. Stick the whole thing in the oven and cook as normal. This is just an example. If you find you can’t do it this time, don’t beat yourself up. The important thing is you tried and if you keep trying you will succeed. Do you have anyone who lives nearby that you could talk to on the phone or be there with you while you try?

    Always a thumbs up👍dear Mary. I am sending it to my son so he can get those ten tips. He works all day as a Respiratory Therapist. He comes home and 75%of the time, fixes supper. He has a lovely wife , she just doesn’t like to cook!! My son has loved to cook since grade school. He doesn’t like to clean up so his wife and teenage daughters do. He will love your 10 tips! I want to ask you a question? Do you enjoy cooking as much in the summer as the coolness of winter. I do not......salads get abit tiring as much as I love them. How do you cook in the kitchen everyday during the hot summer. You should know since you live in Texas. I live in Idaho and it gets up over 100 degrees a lot on the summer. Just knowing it’s that hot outside makes me want to not cook. I usually end up eating cold cereal! Wish you were here to cook for me.....but you must get tired.

We really rely on salads and canned fish that I keep in the refrigerator… Like salmon and kippers. We can pull a meal together with that and some nice toast or some crackers and maybe some ferments or quick pickles so I don’t have to worry about turning on the stove. So glad you’re here!     Hi Mary,
    I really enjoy learning all this about making a Traditional Kitchen, however I live with my 60 yr. old son whio is a very picky eater and has developed bad eating habits living alone for many years. Very few veggie and no green salad at all.
    I can get some veggs into a stew or soup occassionally, but that is about it.
    Very discouraging. What do you sugget?

      The food companies indeed set us up to be addicted to their products. 2 great books I’ve read on the subject, both by Michael Moss: 1) Salt Sugar Fat and

    I can't consume any carbohydrates through bread, noodles, rice, and potatoes. So I do need to make soups, stews, and I will use all of your tips about keeping scraps (from veggies). I already am cooking the chicken carcasses for a long time. I am not getting any gelatin from the bones, however. Why is that?

    We call cleaning out the fridge “restaurant day”. I take everything out of the fridge, put it on the counter, and let each person choose what they want out the the left overs and microwave individually.
