- A lot going on this week. During the first days Jannes and Thomas help out with levelling the tent area and preparing the poles for the fences. I am finishing the wood paneling and the bathroom vanity. Chiara is coming to visit and we go foraging.

Home made herbal preparations (45:39) from left to right:
Wild thyme honey
Good for cough or paired with cheese.
Stir with a spoon every few days.
Beech leaves and mandarin peel liqueur
Nutty, fresh, citric drink.
Let sit for minimum 3 weeks, shaking every few days. Serve with a splash of brandy.
Wild thyme “grappa”
Traditional alpine drink and home remedy for various minor health conditions.
Let sit in a warm and dark place, shaking daily.
4 conifers oxymel
Sweet and balsamic, can be used as a salad seasoning or taken by the teaspoon when needed.
Let sit for 4-8 weeks in a dark place, shaking daily.
Nettle infused vinegar
Remineralizing and anti-inflammatory, can be used as a salad seasoning or taken by the teaspoon when needed.
Let sit for minimum 2 weeks shaking daily, then strain and keep the vinegar.
Garlic honey
Traditional home remedy for cough and cold. Enjoyed as food, it is delicious when paired with baked pumpkin.
Let sit for minimum 4 weeks, stirring with a spoon every few days.

A salt that tastes like an alpine forest. Pairs well with baked focaccia or bread, with fish and meat, can be used to rim a cocktail glass

Martijn- You have absolutely earned the right to now and for many years to come to live with no pressure.
And that is the healthiest way to cope with Italy's bureaucratic machinery. They don't know the concept of urgent. And you can't appeal to anyone for help.
Something I think a lot of us wish they could say in their own lives. Every day a cabin on a mountainside is looking better and better.
Chiara is a younger version of my wife. Penelope (my wife) who was born and raised on the Portuguese vineyard I purchased as a wedding gift and presented to her. Her Father had lost the property due to none payment of tax. She's been teaching our twin daughters the joy of 'foraging' for the last 15 years... taking them on long walks through the National Forest to the East of us. The abundant and varied diet we enjoy is all down to her. Her Parents both lived nearby and were an awesome source of advice, aid and support at the start of our venture.
Sadly, Penelope lost both parents just before Christmas, last year - they were both diagnosed with Dementia and the decline was startlingly rapid and severe... Christmas was a time of grief and yet, surprisingly, joy.
To not, daily, have to interact with someone you love but who no longer remembers you, gave us time to reflect and recall the good times... tears of sadness could be turned to tears of laughter as we told stories, recounted tales and gathered their whole to our hearts.
I'm Italian, I had an uncle affected by the same illness. He was a vigorous bricklayer and a tireless cyclist all his life. I offer you a few words of comfort, I can understand your situation.

What a wonderful episode yet again and what a joy to be able to listen to Chiara. Thank you for putting the names of the foraged food on screen and also what was made. I took a screenshot of both to act as a memo and to try and learn and remember from the information kindly imparted by you both. When I was a very small boy growing up in Wales, I asked my great-grandmother about what wild food we could eat and she told me what to collect. I remember gathering nettles and dandelion leaves and later my grandmother prepared them for my great-grandmother and I to eat. I loved my great-grandmother very much and this episode brings back fond memories of that time, long ago.
