Always price out labor first, then price materials. I run into this doing estimates occasionally for my husband and brother in laws construction company. People often assume making a project use a bit less materials will make it cost less. It will, just not by a lot because the most expensive part of goods and services is the labor People put in to get it to you.

I've been told at least 2/3 of the price is labor. Everyone I talk to seems to agree it's about right, at least for construction.
Same in my crafts, I charge per hour of work plus materials.
In the art industry, the rule is "The smaller the details, the higher the price."

I've had pricing errors too. I hand make products for my Etsy shop and I originally priced one particular item at around $20 or $30. I later raised it to $60. Then I finally (I know, I should have done it earlier, but I was just starting out and learning) did the math and, with all my time and materials my item was actually worth more than $120... everything's a learning opportunity.
Ugh the second you said it I yelled NOOO! Smaller is all the work just more intricate :(

absolutely a struggle for all artists, no matter the medium. when helping other artists price their work, i always remind them that what matters most are these three things:
-how much work will it take
-how much time will it take
-how happy you are with the finished product
however, these points change depending on the context and art medium. commission vs original creation decide what changes. for an artist who's artform is food and their main business is commission work (commission work being anything you make AFTER being contacted and paid by the customer) i want to emphasize these things:
-material cost
-time and work it requires
-skill required
and add on "tedium" to that if it is anything with very small or specific details. it's hard to put a price on these things, but remember that (in most cases) the skill is worth more than the materials. for an example i'll use the experience you tell us here to explain the price.
your full size custom order sugar cookies *start* at $3 per cookie. for 300
of these cookies, it would cost $90. the commissioner asks if you have a smaller size available and asks for the same design but on a mini cookie. the design isn't incredibly complex on a full size cookie, but on a small size cookie the same design will be *tedious.* if they insist on not simplifying the design, take that into account. the cookies are small, but you are an artist with a skill they want to pay for, they do not have this skill themself or they would do it on their own. for a detailed design on a miniature scale, either charge half of the full size cookie ($1.50) or higher depending on how hard it is to do this design on 30 miniature cookies. even then, unless the design is incredibly simple (spider man is a complex design, a regular one or two color smiley face is not), i would not charge less that $1-$1.25 for a mini cookie (maybe even $1.50 as lowest cost depending on your material cost). i don't know your material cost, and i don't know your skill level or how long you've been doing this. all of those things are important.
this also carries into full size cookies, because there's always a chance someone will request an incredibly difficult design on a full size cookie and even at full scale it is hard to do for a batch order. take into account how complicated the design is vs how many times you'll have to do it for this order and how long it will take you. then factor in your materials. if that design is difficult and complicated and you know it will take a lot of your skill and time to do it properly, charge more for it. again, they do not have this skill and are asking you to provide the skill for them. you have, presumably, been practicing and honed this skill enough for someone to commission you.
we as artists have to remember, we are not a multi million dollar company with workers. even if you own a bakery, unless it's part of a bigger company, you are not the same as krispy kreme, or oreo, or nestlé. they are companies that hire millions of employees who are (or should be) paid wages for their work, and their work is very specific. we cannot charge what oreo charges, because we are independent and the skill you provide is what the customer is paying for. anyone can be an artist, but not everyone can do what you do.
i can provide more advice, but this is the basics. i'm sure you know what you're doing and how you're doing it, but artists of all kinds should stick together. we have a habit of undercharging even when we've been doing it for years. it's a struggle we're all familiar with and answers are hard to find.

"Time is money." People always assume smaller is cheaper but not if it will be more time consuming to do a miniature version.
SIZE ALWAYS MATTERS...not only in a relationship...but would you put 14-inch tires on a 12-inch rim and drive your car???? What I did learn as a hair stylist is that EVERYBODY'S idea of an INCH is different....so that is why guys think (never mind).

It's funny because with crocheting and knitting, the yarn size matters as much as the finished objects size. For example I could make the same sized finished top, but if I used #2 weight yarn it would take 3-5x longer to make than if I used #4 weight yarn, not double but way more 😂
That reminds me of a time when my mother owned a candy store and someone wanted like 200 or more of those little cheap lollipops that costed like 2 cents, so like the mark up is like 2 cents at the most. She wanted them counted out and separated into little paper bags and tied up, so she could tie them up to her golf cart, my parents didn't keep all those suckers and actually I don't think it was something they even carried? So they had to pick up all these suckers, count them out and put them in paper bags that cost more than the suckered? We laughed about the ridiculousness of it, but they did it anyway as kind of a good customer service move, since this lady would probably be complaining at the golf course and all over town.
Is 2 cents really cheap?
Cost of materials x3 is usually my rule of thumb however miniature art… that price is something always up to the artest cause it does take alot more time and effort compared to the cost of materials, unless you sacrifice details. If the customer mentions budget tell them what you are comfortable doing for that price and that it wont look as extravagant as your normal work. Imo I feel its better than not offering that item completely. I used to make earrings at $16 a pair, ppl would ask for something smaller and ask for them to be $8. I would show them what I could do for half my price and a few ppl would walk away cause it looked like half the detail but a many would be like “that’s exactly what I pictured” and be really really happy. It separates customers who value you and your work from people who don’t appreciate the art but like the item.

The ONLY time I allow minis is to give away my scraps. Once I’ve rerolled my dough and cut the big pieces out I’ll go in and cut some minis. I decorate them with leftover icing if I have enough, if I don’t they get plain white ice and a dip in colored or white sprinkles or a streak of water color in a color that goes with the set. If I have enough I’ll do a bag with 3 minis - perfect for a kid or someone who doesn’t want to eat a huge cookie, or if I just have a few I’ll add them to bags randomly. People are always really happy with that!
If I have a decent amount of dough left but not enough for at least 6 cookies I’ll cut one big circle or square and make a “Center piece” cookie, where I use again leftover icing and write a message like “happy birthday Jessica! Baked and iced with love from ______ “ and then put my brand in.

Idk if that's "supposed" to be a wand or a palm tree, but it could definitely do a good job of both!
People sell cookies for $4-$6 each cookie depending on the complexity.. like this girl wanted gold which can only be hand painted on these butterflies.. they were very very detailed so those were $6/each .. people do that work mechanics too.. like if they do it faster they thing they can pay less but it's the experience..

Typically people stick it in the freezer after cutting for a few minutes before baking

The mini cookies should've been quoted as $2.50 per cookie if the average size ones were $3. The customer will just go for the $3 when the price difference isn't that big.
The mini cookes should have been a $1 I'd not $1.5 making something significantly smaller but only cutting down 50 cents it's scaming the customer
@@silvermisststorm the point is discouraging the customer from choosing the smaller size. The amount of labor it takes to make the smaller size is the same, if not more than making the bigger size cookies. The customer is only ordering 30, not 3,000 or 30,000 cookies, where the baker can make a profit from buying bulk supplies. $2.50 is not unreasonable.
I think if you do mini cookies, it should only be 1/3rd less of what you normally charge, so $2 in this case

$3 for one cookie & she wanted 30…The more they order the more you go down on the price. I would never pay $3 for average size cookie. I don’t care how good they are. I’ve been baking for years. I know what it cost to make the cookies.
That is HER price and nobody has to pay it and they can just move along until they find a person that is in their budget....but don't expect wine on a cheap beer budget!
Making the cookies itself isn't the biggest issue (i.e. dough, oven, icing etc.). I think it's the price for labour and details. I wouldn't pay that much, but I get it. I've seen videos of people spending 15 - 20 minutes PER cookie in decorating. Times that by 30 and it makes sense.
