I've always had a dream of having my own 50's-60's themed diner and just recently looked into a food cart as a start.

Most states won't let you prep and cook raw products from an open cart.
There are ways around it, but it's limiting to what you can offer. If you befriend someone with a commercial kitchen you can rent some space to heat up hot dogs and burgers and then just keep them hot. It's not the best, but it is a work around.

I love watching hot dog carts good for her. Looks good. I’m wondering for the people that do this full time does it take from your daily life. How is the work life balance? I don’t know why but it looks like fun to do and simple.

my mom does something similar, it is VERY VERY laborious but at the same time VERY lucrative.

$5000/month revenue is only $60,000/year assuming no vacations etc. from the revenue must be deducted operating costs like supplies and fuel etc. this produces about $30-40,000/year actual net income from which income taxes are paid etc.
It sounds like she only does it 2-3 days a week.

Am I the only one? 5k per month and BOTH are working? Seems like another set of Americans wanting more, not needing less. Me I can survive on 10k PER YEAR! I'm not lazy, at all, just hate EVERYTHING about having to answer to someone else or have someone else tell me, after decades of dedication, that I no longer have a job. That is worth more than ANY amount of money!

I recommend a few changes; You should do all food prep at your place of business or if you're a home business, do it in your kitchen under a better-controlled environment other than outdoors, straight from the packaging. Also, your hair should not be flying all over the place. Wear a cap, scarf, or a hairnet. FOODBORNE ILLNESS IS A REAL THING!
