The key to it is to let it rest for a few hours.

Looks good... I screwed up my very first attempt years ago, and didn't try again for about 10 years😂 when I went at it again came out so good, but my problem the first time I was rushing and doing it all wrong. I tried on my Z pellet still came out good.

Just a little pointer! When you get it up to temp before you rest it, check with a temp probe for tenderness. if it goes in nice and easy like butter in different areas of the brisket..If not then keep it on and check it every fifteen minutes while monitoring the temp. That is how you know it’s really ready for the rest period.

Wow looks bomb!! My first brisket was a fail cause I smoked it fat cap up. With z grills pellet smokers, the heat comes from the bottom so it dried up the meat side since it was facing down directly towards the fire. Going to give it a try with the fat cap down like you. Question, after you wrapped and put it back in at 250, did you have the fat cap down after wrapping it too? Also, you start at 225. I was planning on starting at 205 before wrapping, thoughts on that?
Yes I had it fat cal down. I think it’s a great idea to start at 205 to give it a nice bark to it.
@@BeginnersBBQso the butcher wrapped brisket continues to be cooked fat cap down? My Z Grill does not have a 205 F setting, is it still ok to do the initial cook at 225 F?

I see you put a probe on the flat and the point. Which part was at 165 when you wrapped?

Yes I like to cover the top part for cleaning purposes. Makes it so easy to clean. Just take it off and add another one. Some people don’t like it but others do. It’s up to you.

Enjoyed the video! Just a helpful hint, when you pull it at 203 keep it wrapped and place on the counter for an hour before putting it in a cooler to rest. Doing this stops the cooking process. Carryover heat can raise your brisket temp to 215 or more which can dry out your brisket. Keep the videos coming👍New subscriber here.

How long did it take to reach 200 degrees internal temperature?
Like around 4 hrs from the wrap stage. It was like 8hrs total.
So 12hrs total with resting time with a 7lbs brisket how many lbs of pellets did you use

I PUT IT ON THE PAPER THE LONGER I HAVE TO LEAVE IT APART FROM THE 8 HOURS ?
Yea it should take about 8 hrs for both. Make sure you you have a thermometer to check at the 8hr mark. It should be at 165 internal. Once it gets to 165 internal you’re going to wrap it for an additional 2-3 hours or until it hits 201 internal degrees. Then let it rest for at least 2hrs.
