The crust got that flop till you fold it. The sauce has that flavor that spreads even when its not there. Cant speak for the cheese, but that looks like a solid pizza!
I like a good story to accompany the tasting. Maybe if you dined in more often you'd have more stories to tell. I don't come here for the food, but for your perception and interpretation of all that surrounds it. Good job!
I'm from Buffalo, it's blue cheese for chicken wings period. Honestly you may only have access to blue cheese dressing which is NOT real blue cheese. There are several local brands that are absolutely fire.
I think a white or yellow onion is a great combo for sausage and onion pizza. Your right about that Italian sausage here in the US. Not a fan of the red onion it’s too sharp. I like a sweeter onion which is why it works perfectly (to me) paired with the right Italian sausage. Good luck on your sausage quest

Depends on the restaurant for me when it comes to ranch or blue cheese. Its gotta be Homemade ranch no bottled ranch for me... and its gotta be a chunky blue cheese. Also it really depends on flavors to me. Not every ranch and blue cheese are tasty! Thats the answer for me😅
