Once you eat sushi and sashimi in Japan, you’re spoiled for sushi anywhere else in the world. It’s so clean and pure, and the rice is so soft. The best.
so for the nigiri you ate this in order" shrimp, horse maceral, red snapper, tuna (lean part), some type of fish (idk either lol) but looks like white fish, chutoro (tuna inbetween the belly and lean part), another one idk, otoro (fattiest part of the tuna, stomach), sea urchin, salmon eggs, tomago and the 6 pieces was mince tuna (probably mince chutoro)
Ben's videos are always such a vibe. A food enthusiast who just eats and open mindedly talks about how much he appreciates the food + just life stuff. Love it! I could zone out, watching his videos for days. They're all so comforting to watch in a way that's hard to explain

I saw this Japanese Shuhi chief who moved to the states. He said, "I used to tell people to use apple cider vinegar. Then people told me it wasn't authentic. I'm Japanese, and a Sushi chief, and people tell me how to make Sushi. Okay, don't use apple cider vinegar. Not like I'm a Sushi chief from Japan and made Sushi my whole life. "
Omakase is best experienced dine in because they will make it fresh and serve piece by piece immediately and explain each piece to you, the sushi also comes pre sauced with the perfect amount of soy sauce by the chef. There’s a place down in roppongi called tokyo sushi ten, they serve like 20 varieties of nigiri and a few cooked dishes. I never had omakase before and always thought omakase was like a few hundred dollar meal where you never get full, but in this place which was my first experience you’ll be so full you get food coma towards the 2nd half of your meal and it was like 70 or 80 bucks for the entire experience. Of course every piece was a hit.
There's nothing better than eating good sushi for the first time. I had grocery store sushi for years before I went to an upscale sushi restaurant, and it completely blew me away. You can't even compare it to anything you've had before. It may be a bit pricey, but it's 1000% worth the money just for the experience alone. I strongly suggest everyone try it when they have the chance, especially those who claim they don't like sushi based on what they bought at a grocery store.
i still hate sushi even when it comes from the best rated spot in my area. not surprising though, cus i have always hated anything that has to do with fish, fresh or cooked, expensive or inexpensive. doesnt matter. it all tastes equally like sewage meat to me. i guess im just wierd
100%. I grew up not really caring for sushi until I tried it from a legit sushi chef. I was absolutely blown away and it was unlike any food experience I’ve had even until this day. I’ll still eat “sushi” around town but nothing comes close to eating it the proper way.
that uni that you had looked pretty gnarly, i harvest my own and if its fresh it should come out as a solid chunk from the urchin and have a bit of texture to it, not slimey goop. Also old urchin has the "sea flavor" kind of like when you go out to the ocean at low tide. Fresh urchin should taste almost sweet and buttery/nutty.
Great vid brotha. I hella miss eating real sushi in Japan. If you actually go to the restaurant you will be treated to the order in which the master wants you to eat them. Hella higtens the flavor and experience.
I'm guessing, shrimp, mackerel, halibut, albacore tuna belly or bluefin, belt fish, toro, amberjack, fatty tuna, uni, salmon eggs (ikura), have no guess on the rolls, tamago.....that was fun to guess,! Enjoy your trip.
Man that looked freaking good! Old thread and someone already did an accurate lineup for the nigiri so I won't list it again. Most sushi establishments give more maki because they are able to use the small leftover bits from things like nigiri. Not to say they are bad scraps because they are actually really good leftovers at a bargain price. The tomago usually has mirin in it which is why it's sweet. The price for that tray is very reasonable. Probably the best way to taste test before splurging on the ones you really like.
If you want to go to a fairly reasonable price sushi-boat style place, which is really good, I recommend: Kaiten-sushi Nemuro HANAMARU Ginza (actually near tokyo station). And also there is a really good dessert place nearby called "Del'immo"
that chef cut the raw fish the best. like no other chef could ever cut it. he had to mop the floor for 20 years before he could even hold the knife. this prepared him to be the best fish cutter in the world.
They usually leave an identifier on the piece of sushi. For example the one with silver skin was mackerel or Hikarimono so they will leave a bit of the skin or some thing to identify the fish. Especially If it’s not easily identifiable like fatty tuna or salmon
I usually have a few krab salad gunkan (the seaweed around the side type like the uni and egg ones here) and a few tamago nigiri (not the tamagoyaki block Ben got) at the start and at the end of my sushi meals. Otherwise, I usually have a mix of salmon, tuna, shrimp (non-raw) and red snapper nigiri as the main items. Eel (unagi), seared salmon and seared shrimp are also nice to sprinkle in, but I don’t go for uni or some of the ‘weirder’ stuff…not even spider rolls (soft shell crab) or salmon skin rolls. Some things aren’t bad, but just kinda make me wish I got more of what I really like. Oh, and inari is a nice ender too.
Never been to an omakase place but from all the videos I've seen I thought the chef has a particular order of what is presented to you first depending on the type of sushi/fish. Was there any notes/instructions included when you ordered?
Welcome to Japan. Sushi on another level. They take everything and perfect it. Heck even the fish I think. You can pay thousands in the US and not even touch the quality of high end sushi in Japan. I miss living there so much !
Sea urchins are invertebrates under the phylum echinodermata. They are closely related to sea stars and sea cucumbers. They are very simple organisms that use numerous small feet to scurry around and eat whatever they can come across. On the underside of their spiky bodies is where their mouth and feet are situated. The part that is eaten by people are the gonads.
$60 for this is insane lol. And I mean, an absolute bargain. Sushi of this quality anywhere else in the world... you're looking at 3-4x that cost. Great video.
Ben one thing as you begin your sushi journey is the rice is actually the primary ingredient that highlights the fish and enhances it. Crappy sushi rice can actually ruin the experience even if the fish quality is very good. Also if you can find good Hokkaido Uni, that's a really good type of uni.
$60 is a steal for great Japanese sushi Anthony Bourdain on his show would say it’s not uncommon to from $300 to $600 on good sushi 🍣 per person at the best places
Their preparation of the sea urchin looks a little unusual, usually it hold a bit more form. They gave you six of the roles because it came from the same role probably.
$60 for that is actually very reasonable, Omekase runs into $200 - $300 per person. So $60 for quality sushi delivered is a bargain. Even Sushi Zenmai will set you back that much for similar amount of sushi. And that is a chain restaurant.
at first i thought sushi is just slicing seafood into small bits on top of rice until i saw the process from frozen chunk, the cleaning, debone, filleting works, then the large piece gets blanched in seasoned marination. there are process that treat the seafood to be more palatable (at least from that cooking video) . i still dont dare eat raw sushi in my country for safety reason, if im going to japan probably i will try it

i have authentic sushi and fresh sashimi roughly 1~2 times every year, they are just amazing, but you can't deny there's an odd charm with cheap sushi
