Crawfish Boudin
Ingredients
1.5 tbsp of cooking oil or butter
4 pounds of crawfish tails
4 cups of cooked rice
2 large onions chopped
2 bunches of green onions chopped
1/2 bunch of parsley minced
8 cloves of garlic sliced
1/2 cup of white wine
25 grams of kosher salt or to taste
28 grams of my salt free Cajun Creole Seasoning or to taste
1 tbsp of Louisiana hot sauce or your favorite
4 oz of tomato sauce
5.5 grams of MSG (optional)

Rus’s Creole Cajun Magic Seasoning
2.5 tablespoons of paprika
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
2 teaspoons dehydrated lemon zest. I use McCormick
Combine all ingredients and store in a airtight container

Ok, y’all are gonna have to try this! OMG! I love boudin, but this was phenomenal! We do the regular type, but this beat it all to bits! Happy New Year to each and everyone of y’all!
I make homemade Italian Sausage it my uncle Bibby's recipe he was in WW2 and it is his mothers recipe. He use to make 900 lb out of his basement in Villa Park IL in the 70s for the beef and pizza joints in the area. I use to go over there when I was a kid with my dad and watch them make the sausage. I was lucky to get these recipes before he passed. We just made 20lb here in Georgetown SC. Going to have to make you recipe. I have been eating this sausage sense I was a kid. RIP Dad and uncle Bibby. Thanks

As a Texas I’ve been eating boudin my whole life but I’ve never had crawfish or alligator boudin. I’d love to try it.
Rus, I’d love to see you do more on a Weber kettle. They’re really the most versatile cooker out there. My cooking capabilities have really increased since acquiring one. Some of the bbq I have pulled off that thing, I’d put up against anything. Happy New Year brother!

Hey there, Great recipe! I replaced the canola oil with Avocado oil. It's a better oil for your gut than Canola or any highly processed seed oils

I'm in Maine and this gives me the idea for "lobster" boudin, using the shells to make stock to cook the rice, white wine, pork fat, etc. Fancy but interesting.

I"m going to try that recipe, but instead of a sausage I'm going to do crawfish egg rolls since I don't have as sausage stuffer.

Well you certainly could use shrimp but it won't be crawfish boudin any longer. It will taste much different but I'm certain it would still be very good.
