Phin comes from the French word Filtre ( Filter in English ) . The Banh Xeo , Banh Khot , Banh Cuon , Goi Cuon , Cha Gio , Nem Lui , Nem Nuong , Bo Bia etc... are not made very salty because you have to dip them in the appropriate sauce and that sauce will enhance the flavor of those foods and make all the difference . Many foreigners don't know how to eat Vietnamese foods and find them bland because either they don't dip them in the sauce or they don't mix well all the ingredients together before eating to get a flavorful homogenous taste in the mouth .

Hello Alex, lately Ive been toying with the idea of moving to Vietnam and teaching English there. I just wanted to ask what the salary range might be for someone who is not a native speaker but has a master's degree in English teaching with 2 years of teaching experience. Thank You so very much.

Banh xeo isn't made to be eaten without fish sauce...so yes, it's intentionally bland as it was meant to be eaten a certain way, which is typical of Vietnamese foods that comes with dips and such (you wouldn't eat the spring roll without the dip, right?). Many Westerners aren't familiar with how to eat Vietnamese food properly so I always recommend they do food tours so they can more about the cuisine/culture.
