Zereshk Polo -- Iranian Saffron Rice and Chicken

- Although my barberries had blackened, the dish is still entirely delicious. Zereshk Polo is a favorite for Persian New Year (Nowruz). It is one of my favorite dishes.
It is better to use fresher barberries as eventually the wonderful red color they have is lost (as you can see here).

(chicken)
4 chicken legs
1 large (or 2 smaller) onions, peeled and cut into 8ths
1T turmeric
1/4tsp saffron
Salt and Pepper
150ml (2/3c) water
1T ghee/clarified butter
(rice)
4c (1L, 800g) rice, preferably basmati
Water for boiling
1T salt
1/4t saffron
50ml water
(barberries)
100g dried barberries
1T ghee
1-2T sugar
dusting of cinnamon
a bit of liquid from the chicken (optional)
1. Wash rice until water runs clear. Boil with plenty of water and salt for 4-5 minutes to soften a bit. Strain in sieve.
2. Pound saffron in a mortar and add 50ml (3T) of boiling water. Cover and set aside.
3. In a pot, mound the rice and poke 5 holes in the mound. Cover and steam for 45 minutes.
4. Wash and dry chicken.
5. Heat ghee in a pan (or make it by heating a bit more butter and skimming it after the liquids boil off). Add onions and sautee until browning.
6. Add turmeric and continue to sautee until everything is very yellow. Add chicken on top, and add saffron on top. Cover and turn up heat, frying hard for 5 minutes.
7. Add salt, pepper, bay leaves, and water. Cover again and simmer for 1 hour
8. When the chicken has been cooking for about half an hour, start the barberries. Add the ghee (or make it) in a pan (a wok works well).
9. Add barberries and stir a bit. Add sugar and cook until well incorporated. Add a dusting of cinnamon and deglaze with a few spoons of the liquid from the chicken (if desired)
10. Mix a small amount of the rice with the saffron water. Spread out rest of rice and cover with the saffron-infused rice. Sprinkle with barberries. Add chicken and more berries.

It depends on the food. Takes me maybe an hr to do the editing and some time to write up the recipe. Research and cooking time vary a lot though.
