Thermoworks Billows Test | Old Country Gravity Smoker
In this video I test out the Thermoworks Billows in conjunction with my Thermoworks Signals. I was told that a fan system helps the performance of the Old Country Gravity fed smoker. Let me tell you that I was absolutely amazed at how easy the system is to set up and even more amazed at how well it worked with the smoker.

    Have you noticed any pros/cons to the different designs? I was looking at the 55qt that looks just like your 77qt, only smaller. However, I came across the 65qt and like a few things about it more. From what I've seen in videos it seems like the 65 has a better seal. The 55/77 doesn't seem to be as gapped when the latches are open, thus making me think the seal isn't quite as tight/robust as the 65. Any information or opinions you could share are greatly appreciated. I bought a RTIC and the drain plug leaked the entire camping trip. Called RTIC and they couldn't have cared less. I'm returning it for a full refund so now I'm going back to what I probably should've bought in the first place. My local Walmart has the 55 but not the 65, so I'd like to know your thoughts, since your 77 is pretty much the same as the 55 I can get locally. Walmart and Amazon both have the 65 for just a little more money.

    Wow! Man you have got an awesome setup. I just found out about your channel. Your review of Old Country Gravity Fed Smoker is thorough. I also looked at G2 but I prefer this one over G2. I am not experienced like you. Thank you for the detail explanation.

    Totally agree! I already had the billows system and used it with my OK Joe bronco. Just purchased the Old Country two days ago. It takes foooooreveeeer to heat up without the billows. 100% agreement on dumping a hot chimney of coals in first, then a chimney of unlit briquettes on top of them. Put your wood chunks in the bottom and let her role! 🔥

    I started doing this a couple of years ago on my Weber Grill also using the Vortex... like you said 40-45 minutes, and it's money all day. I actually laughed when in the the beginning you were talking about hour and a half to two hours... they looked great

    Been trying to find out but wasn’t not able to see anywhere, which rotisserie brand or model you are using? My GMG Daniel Boone is not rotisserie ready, I’m sure it’s easy to modify but not sure which road to take. Any inputs ?

    Great video! Got my sub. I do have a MB 1050 and yea you are right about it. Just nothing but issues. Already on my 3rd controller in 2 years. Should have just got a fireboard controller lol. Anyways I am looking at other smokers now and I do like this one. I do have a question for you. How high can you take the temp and can it handle that high of a heat? One thing I do like about the MB is that I can crank it up to 500-700 degrees if need be. I just did a tomahawk steak. Smoked it until about 110 internal then crank it up to 575 degrees and seared it. I also do other stuff using that high of a heat, like chicken wings. Does this go up that high with that controller or does this smoker have a max temp you can take it too? Thank you.

      I haven’t had it up to high temps but I’m sure it’ll handle it. Might switch to lump charcoal and a hotter burning wood like mesquite. Thanks for watching!

      Hello! Sorry for the delayed reply. I like using water because I prefer to keep the flavor profiles of the proteins I’m cooking. Apple juice has sugar which I believe will also have a tendency to darken the ribs. I really don’t think it would add flavor at all. I use water to add moisture to ribs, chicken and even Brisket.     I made this BBQ sauce and it really went well with not only Pork, but brisket as well! It has an incredible flavor. I added a little Cayenne pepper in a second batch, to add some heat but not change the flavor!!

    Rubbing down the inside of a Weber kettle grill with vegetable oil before the initial burn isn't necessary or recommended by the manufacturer. The practice of oiling comes from seasoning cast iron or steel cookware to create a non-stick surface and prevent rust. However, Weber kettle grills are coated to resist rust and do not require this step. The main thing to do with a new Weber kettle grill is the initial burn-off, as mentioned earlier, to remove any manufacturing residues. This ensures the grill is clean and safe for cooking. Regular cleaning and maintenance after each use will help keep your grill in good condition.

    I have a PBC and I’ve enjoyed it. But I really like how easily you can access the charcoals in that Pit Boss. That’s nifty. Had a buddy do the sausage trick you did several years ago and I’ve been copying it since. I even do it with hot dogs. Is awesome.
