I do this every time now. No huge boiling pot of water to put the home in danger and no dry pasta waiting for sauce. Let it soak in cold water for an hour first. If you’re careful you can get the water and pasta balanced so that no water is discarded at the end.

if the internet is infuriated then they're no different then the uneducated peasants that accused innocent people of being witches. When you don't need a massive pot then this is the way to go it gives you starchier water to use for sauces, its quicker, and doesn't waste extra water.

Madame, please tries this one 1 clove of garlic 1/2 glass of white wine 1 onion (better shallot) 300 gr rigatoni water a lot of water 500 gr of tomatoes (note: use tomato sauce, "cherry", "datterino", "sammarzano", "pachino", etc ... avoid tomatoes for salad because they are not juicy enough to give a satisfying sauce) 20-30 gr basil three pinches of coarse salt a pinch of salt extra virgin olive oil Preparation cut the onion into small pieces, wash the basil, dry it and chop it coarsely, peel the garlic clove, cut the cherry tomatoes into small pieces put two tablespoons of oil in a saucepan, turn on the fire, wait 10-20 seconds, put the garlic in the oil, wait for the color to become light beige, remove the garlic, put the onion, wait a few seconds, pour the white wine, wait for it to evaporate, put the tomatoes, add a pinch of salt, lower the heat to low, stir the tomatoes from time to time, if the sauce becomes too thick to burn, add a little water (1/4 of a glass or less), preferably from pasta.
