Matcha Ice Cream Sandwich with Green Tea Choc Cookies Recipe!

VEGAN - HEALTHY - TASTY - EASY!
RECIPE:
MATCHA COOKIES
1.75 cups self raising flour
2-3 tbs matcha
1/2 cup syrup (I used rice malt syrup)
1/2 cup caster sugar
5-6 tbs vegan butter (I used Nuttelex)
1/2 cup choc chips (or more if you'd like)
1 flax egg
Dash of soy milk (optional)
FLAX EGG
1 tbs grounded flax seed (simply food process/blend/pulse flax seeds)
2.5 tbs water
BANANA ICE CREAM
5-6 frozen bananas overnight
Method:
MATCHA COOKIES
1. Preheat oven to 180 degrees Celcius, and line a pan with baking paper.
2. Mix all the wet ingredients: butter, syrup, sugar, flax egg - thoroughly combined.
3. Mix all the dry ingredients: self raising flour, matcha powder - thoroughly combined.
4. Make a well in the centre of the dry ingredients, and add the wet ingredients. Stir thorughly until you end up with a cookie dough consistency - not too wet, not too dry, but combined. Add soy milk if the mixture is too dry, and flour if too wet.
5. Roll mixture into desired shape, and bake for 20-25 minutes.
BANANA ICE CREAM
1. Freeze bananas overnight (longer for a more ice cream consistency - I usually freeze them for 1.5 days!)
2. Food process bananas, making sure to scoop down the ends now and then, until you end up with an ice cream consistency.
Put them together and you have yourself matcha ice cream cookies!

    Hi. I have been drinking matcha tea for years and would like to think I can call myself a matcha connoisseur. I just finished my own taste test of 5 brands of ceremonial grade Japanese organic matcha. I want to share the results of my taste test with everybody. I prepared matcha tea in the traditional way using a bamboo matcha whisk (or "chasen" as they say in Japan), one gram of matcha, and the same amount of hot (not boiling) water. Here are the results: 1st = Doctor King - finest ceremonial grade 2nd = Midori Spring - ceremonial grade 3rd = Kiss Me Organics - ceremonial grade 4th = Kenko - ceremonial grade 5th = Aiya - ceremonial grade The color of Doctor King finest ceremonial grade organic Japanese matcha was clearly the best (10/10). Kenko and Aiya were the worst (which was a surprise for me). The taste of Doctor king was the best - no bitterness at all! :) P.S. For anyone who is new to matcha, there are 2 main grades of matcha: [1] Ceremonial grade [2] Culinary grade [1] Ceremonial grade matcha is the right choice for preparing matcha tea. Ceremonial grade matcha has far more L-theanine than culinary grade matcha, which gives you a delightful and unique "calm alertness" without anxiety or palpitations, which you can experience with too much coffee. Matcha tea is low in caffeine - about 30 mg of caffeine per cup. On the Dr. Oz show in 2014, Dr. Oz and Chris said that matcha tea is the "Champagne of green teas" that "everyone ought to be drinking" for the "extraordinary health benefits" (fights disease, fat blocker and reduces anxiety)! You can't get a better endorsement than that. Dr Oz. is a Cardiovascular Physician! [2] Culinary (cooking) grade matcha is the right choice for cooking up culinary delights like matcha cookies and desserts. It is lower quality and may not taste good if you try and make tea with it.

      +Sophiazhang18 HI Sophia - This must be the worlds slowest reply - but 80-90c is recommended for matcha. You can boil the water (100c) and leave it sit for 5 minutes before using to acheive this without a thermometer. For a matcha latte I use as least water as possible, so it doesn't take away from the milky / creamyness. You can also just mix it in a shaker bottle or blender without water too, this way you won't dilute it with any water :)

      Hi Smuttana17 - It does taste similar, the Starbucks one has ALOT more sugar and syrup. So if you like it sweeter like the Starbucks Green Tea Latte you could add more sugar or sweeteners. Hope that helps !

    Now I understand! I have a water machine and I used it to make Matcha like you make coffee. I didn't understand why the taste was so bitter and it felt like my tongue is getting dirty every time I took a sip.. but I don't have a mixer like that. I have only an eggs mixer that is just too big for my cups in my house. what do I do???

      Use mason jar to shake the matcha, this way you can even use cold water
