POZOLE ROJO: a super rich MEXICAN STEW you need to try
Pozole Rojo is a traditional Mexican stew made with hominy corn, meat and various chillies that is served during all the special occasions in Mexico. I got totally hooked onto it when my mother in law DOÑA ISABEL made it for me and then of course out of curiosity I wanted to learn how she makes it then she taught me how she makes it and now I am very excited to share this recipe with you guys I hope you enjoy it, cheers 🙌

Ingredients you’ll need -
For making the pork stock -
Pork butt (bone in) - 1.2 kg
Pork neck bones - 350 gms
Pork trotter (cleaned and cut into 2 pieces) - 1
Bay leaves - 4
Fresh thyme - 15 springs
Whole black peppercorns - 2 tsps
Garlic bulb - 50 gms
Whole white onion - 300 gms
Water - 2.5 litres
Mexican oregano - 1 tbsp
Sea salt - 45 gms
Cheese cloth - long enough
For making chilli salsa -
Chile guajillo - 6
Chile ancho - 5
Chile de Arbol - 3
Chile chipotle - 2
Garlic cloves - 40 gms
White onion (roughly chopped) - 160 gms
Mexican oregano - 3 tsps
Vegetable oil - 1.5 tbsp
Hominy -
2 cans of hominy (710 gms), drained and rinsed
Toppings -
Radish thinly sliced
Green cabbage, thinly sliced
White onion, finely chopped
Lime wedges
Avocado, cubed

Hey again chef! Would like to ask you if I can replace the butter with oil and at what quantity or maybe combine them. Thank you!
Hello The babka is made with brioche dough so butter has to be used but if you really wanna substitute the butter with oil then I would suggest you keeping the same amount and see what results you get (may be we can learn something from it) I am sorry that I was not able to help you as I never made any babka with oil.
Would highly appreciate if you could give measurements in teaspoons & tablespoons or cups. Not everyone has a cooking thermometer & weighing scale in their kitchen
I would have done that but when it comes to baking it's always great to use weighing scale where there is no chance to make any error. I find the measurements are off most of the time when I used teaspoons, tablespoons and cups for measuring the ingredients and the end results are not so great believe me. If you really are into baking or cooking I would highly recommend you getting a weighing scale and a probe thermometer, you will always get great results, cheers 🙌

I made this today! I think I overproofed them because i left them in fridge over 24 hours (unforeseen circumstances) so it turned out a little crumbly. But flavour was still good! Maybe i will place them lower in the oven as well coz I put them in middle and they rose quite a lot and the chocolate on top burnt a little. Sugary top was nice :)

How much oil do you end up using in total? My impression of this recipe is that you're pretty much using an entire bottle of oil.
Everyone is always surprised of the level of oil used in focaccia, just breathe and keep going it’ll be ok lol
By the time I get done making focaccia I’m into it for about a third of a cup. 👍
Believe me I didn't use an entire bottle 😀 but for sure it does require a good amount of olive oil 🤯

Hello The dough should be stored in the fridge not the freezer. And once you pull it out of the fridge, you can let it sit for a few minutes on the counter before rolling it.
