SALMON WITH CREAMY ORZO
Salmon with Creamy Orzo looks like and elegant dish but made with minimal effort. It has creamy, lemony orzo topped with baked tender salmon fillets. It definitely gives off fancy vibes but it’s also a perfect for a weeknight meal!
Salmon with Creamy Orzo
Ingredients
1 1/2 lbs salmon fillet, divided into 4 portions
1/2 onion, diced
4 garlic cloves, minced
1 3/4 cups orzo pasta
3 1/2 cups chicken broth
1 cup heavy cream
1/2 cup shredded Parmesan cheese
3 tablespoons lemon juice
Zest of 1 lemon
Extra lemon wedges
Directions
Preheat oven to 400°.
Place salmon on a baking sheet. Season well with salt and pepper and drizzle over olive oil. Bake for 15 minutes or until cooked through.
While salmon is baking, cook the orzo.
Heat oil in a pan over medium high heat and sauté onions and garlic for 2-3 minutes.
Stir in orzo and cook for 1 minute.
Add chicken broth and heavy cream, season well with salt and pepper and bring to a boil. Lower heat to medium low, cover and cook for 12 minutes stirring halfway.
Remove from heat and stir in Parmesan cheese.
Stir in lemon juice and lemon zest and adjust seasonings with salt and pepper.
Top orzo with cooked salmon fillets and sprinkle lemon juice over the top.

    I use Filipino soy and vinegar for mellower flavor. If use use a fatty cut, you dont have to add oil. And two bay leaves of course. You can leave it saucy, or dry it out a little at the end.

    Tikka Masala Ingredients 2 lbs boneless skinless chicken thighs, trimmed and cut into small pieces 1 onion, diced 4 garlic cloves, minced 1 tablespoon graham masala 2 teaspoons turmeric 2 teaspoons cumin 2 teaspoons paprika 15 oz can tomato sauce 1/2 cup water 1 cup heavy cream Chopped cilantro Basmati rice or naan for serving Directions Heat oil in a pan over medium high heat and sauté onions and garlic for 3 minutes. Add chicken, season with salt and pepper and cook for 3 minutes. Stir in graham masala, turmeric, cumin and paprika. Add tomato sauce and water. Season really well with salt and bring to a boil. Let simmer uncovered over medium low heat for 10 minutes. Add heavy cream, season with more salt if needed and let simmer for another 5 minutes. Serve with chopped cilantro, basmati rice or naan.

    Salisbury Steak Ingredients 1 1/2 lbs ground beef 1/3 cup bread crumbs 1 egg, beaten 2 tablespoons Worcestershire sauce 1 1/2 teaspoons garlic powder 1 1/4 teaspoon salt 1/2 teaspoon pepper For the mushroom gravy 8 oz mushrooms, sliced 2 tablespoons flour 2 cups beef broth Dash of soy sauce Directions Combine ground beef, breadcrumbs, egg, Worcestershire sauce, garlic powder, salt and pepper. Divide beef and form into 5-6 patties. Heat oil in a pan and brown patties about 3 minutes per side (beef does not need to be cook through at this point). Remove and set aside. Add more oil and sauté mushrooms for 5 minutes over medium heat. Stir in flour. Slowly stir in beef broth while whisking to avoid lumps. Add a dash of soy sauce, salt to taste and black pepper. Bring to a boil and let simmer over medium heat until slightly thickened, about 2-3 minutes. If gravy gets too thick, add more broth or water. Return beef patties back to the pan. Cover and let simmer over medium low for 10 minutes, or until cooked through.

    Skillet Shrimp Fajitas Ingredients For the shrimp 1 lb shrimp, peeled and deveined 1 teaspoon chili powder 1/2 teaspoon paprika 1 potato, small diced 1 bell pepper, diced 1 onion, sliced 1 teaspoon paprika 1 teaspoon garlic powder For the chipotle sauce 1/2 cup mayo 1-2 chipotle peppers in adobo sauce 1 tablespoon honey Tortillas Chopped cilantro Directions Season shrimp with chili powder, paprika, salt and pepper. Heat oil in a pan over medium high heat and sear the shrimp about 1 1/2 minutes per side, until cooked through. Remove, set aside and wipe pan clean. Add more oil to the pan over medium heat and add potatoes. Cook until potatoes start to get tender, about 5-7 minutes. Stir in paprika and garlic powder. Stir in bell peppers and onions and cook for another 3 minutes. Stir in shrimp and remove from heat. Serve with chipotle sauce, chopped cilantro and tortillas. For the chipotle sauce Combine mayo, chipotle peppers, a little adobo sauce and honey in a blender or food processor and blend until smooth.

    Taco Dip Ingredients 1 lb ground beef 2 packets taco seasoning, divided 3/4 cup water 8 oz bar cream cheese, softened 16 oz container sour cream 1 1/2 cups shredded cheddar cheese 2-3 Roma tomatoes, seeded and diced 1/2 cup sliced green onions Directions Heat oil in a pan over medium high heat and add ground beef. Cook until cooked through and drain excess liquid. Stir in one packet of taco seasoning and water. Cook until all the liquid has been evaporated. Let cool while working on the next layer. Combine softened cream cheese with sour cream. Mix in the second packet of taco seasoning. Spread mixture onto the bottom of a 9 x 9” dish or something similar in size. Layer ground beef over the top. Sprinkle over shredded cheddar cheese. Sprinkle over diced tomatoes and green onions. Serve immediately with chips or store in the fridge for later.

    One Pan Shepherd’s Pie Ingredients 1 1/2 lbs ground beef 1 onion, diced 3 garlic cloves, minced 3 tablespoons flour 2 cups beef broth 2 tablespoons Worcestershire sauce 1 tablespoon soy sauce, or more to taste 2 large potatoes and sliced, cut each slice into fourths 1 1/2 cups frozen peas 1 1/2 cups shredded cheddar cheese Directions Heat oil in a pan over medium high heat and brown ground beef. Cook until cooked through, drain excess liquid. Add a little bit more oil, onions and garlic. Season with salt and pepper and cook for another 3 minutes. Stir in flour. Stir in beef broth, Worcestershire sauce, and soy sauce. Stir in potatoes, season well with salt and pepper and bring to a boil. Lower the heat to medium low, cover and cook for 15 minutes. If it’s starts looking dry, add little broth or water. Stir in peas. Cover and cook for another 3 minutes, or until the potatoes are tender. Top with cheddar cheese and cover or place under the boiler until cheese has melted.

The only difference is I add a tad more seasoning and olive oil and let it marinate for a few hours to overnight.
