Lemon Garlic Orzo with Roasted Vegetables

This simple but tasty orzo recipe is packed with flavour and sure to be a hit! It’s easy to make with minimal ingredients and whether you grill or roast them, it’s a great way to use up veggies from the fridge or garden.
The vegetables are roasted in olive oil and herbs to bring out their flavours, then mixed with orzo and a lemony dressing for a zesty and savoury flavour combo.
The orzo can be served right away as a hot pasta dish or cooled and served as a cold pasta salad. Either way, it’s sure to be a new favourite. You can’t beat it for a quick weeknight meal or easy side dish.

I hope to try this recipe! Many such videos on the web say no-bake, but that's risky with dry oats, as they're not too digestible without cooking/soaking.

Nope. I do like to store them in the freezer but fridge or room temp is ok.

I don’t have oat flour 😢
You can just make it :) blend whatever oats you have until it turns into a flour-like end product
Put regular oats in a Blender, grinder or food processor and grind until fine, you now have oat flour.
How come after I cooked mine it wasn’t hard bars they were still very very soft and mushy
Hmm, they will still be soft in the middle but the outside edges should be firm. Did you make any changes to the recipe?

I'd have to add a teensy bit of meat to it though. I'm a carnivore I guess that's the term for meat eaters
Suprisingly because meatloaf is all about the flavor from meatloaf seasoning, many of the recipes on here for a vegan or vegetarian loaf is good. The texture and flavor can fool you to think it is meat. Im making one right now. Let me say, if you do it with no meat but use the egg with some cheese on the middle... So good. Just try it sometime and see. 😊
