Lilac Jelly #jamitupjune2024
The Recipe:
The Tea:
3 Cups lilac flowers, destemmed
5-6 Cups boiling water
in a 2 quart jar, pour the boiling water over the flowers and let sit until cool. Cover and let stand in the refrigerator overnight. Strain through a jelly bag or cheesecloth.
The Jelly:
4 Cups lilac tea
1/4 Cup reconstituted lemon juice
1 packet fruit pectin
4 cups sugar.
Mix tea, lemon juice and pectin and bring to a full rolling boil. Add sugar, bring back to a full rolling boil and cook for one minute. Fill sterilized jars, leaving 1/4 inch head space and water bath process for 10 minutes.

    Thanks this was very informative - - I've wanted to learn how to can since I got out of the military life - - you gave me the confidence to give it a try- both water bath/steam and pressure. Which one of the canning books do you think is best for a beginner like me?

      The USDA Guide to Home Canning is the standard, if it's in there it's safe to can, if not don't. The Ball canning book is also excellent.

    I have never made anything out of flowers but I do have a large lilac tree out back. I'll just have to wait until next spring since it's already bloomed for this year. What a beautiful color. Thank you for sharing!

      It's a lid/skillet for a three piece combo cooker set. There's a bottom deep pot, a middle skillet and a lid/skillet top. The bottom and middle skillet have loop handles, the top is the only piece that's marked.

    Thanks much for sharing as always. What would you recommend to strip some mildly over seasoned pieces, not sure I want to use oven cleaner, but think they are more than just a good steel wool scrub. Appreciate any suggestions you might have, I love your very practical methods without getting too persnickity on sensitivity. BTW, what part of Wisconsin are you in, I'm from the Milwaukee area currently living in Cincinnati. Family in the Chippewa Falls area and Iola as well.
