For me that's the perfect adobo! i guess that's the original way of cooking adobo..simmer until dry and let the meat release its own oil. Most ilocanos cook adobo as adobong tuyo. Mas dry mas matagal ipreserve. Mas tumatagal din shelf life. Mas malasa pagka adobo pag medyo burnt yung sibuyas saka bawang.

Next time 1st brown meat, then remove meat from pan and set aside. 2nd in the same pan with oil add dry spices. Dry spices and herbs require heat to activate. You'll know it's activated once the aroma blooms. Last add garlic to brown 3rd add the liquid ingredients into the pan and let it reach a boil. The spices and liquid will infuse. 4th add brown meat into the boiling soup stock. It's better to put it in hotel pan with cover, then braised in oven. 5th once meat is tender, separate meat from braising liquid. Places liquid in sauce pan and reduce. Season to taste The onions can now be separately cooked either caramelized or to crunchy translucent in clarified butter or olive oil. 6th combined meat to liquid, garnish with cooked onions. It will be more flavorful and the onions will provide flavor and change of texture.

I don’t put onions & lemon lime soda in adobo. Garlic, peppercorns, bay leaves, vinegar, patis or soy sauce. Also, tell your cousin? - she doesn’t adobo, fine cause I don’t like kimchi.🙄

It’s minced garlic not diced. 😊 you miss adding whole peppercorn if not, ground black pepper. But you’re doing good cooking adobo for the first time.👏🏻You can use pineapple juice instead of sprite to tenderize the meat and sweetness too. But the authentic adobo is just mainly toyo, venigar, pepper corn, lots of garlic and onions, water to boil and a bit of sugar. The salty, sweetness and acidity should be balanced. It could be pork, chicken, squid, okra, sitaw, fish adobo (yes you read it right. Try Bangus, tilapia or galunggong) using the authentic ingredients. Just add ginger to the fish to get rid of the fishy flavor) Now adays adobo already evolved. May variations na rin. May adobong puti, adobo sa gata, adobong dilaw, adobong toyo etc. etc. Some add coke too. But I still love the authentic taste. 😊 Practice will make it perfect. Btw, we boil the pork for an hour. That’s why we add water. 😊
