I smoke my brisket fat side down as well. i think the radiant heat from the grates is what dries out most people's brisket and the fat will protect it from that. you can always flip it later in the cook to develop bark on the fat side.

Can you do this on a Pellet grill ?
You can cook a Brisket on anything. However, cooking this on a pellet grill trying to achieve the same effect as cooking over open flame is just not going to happen. Right tool for the right job. Hope this helps and thanks for watching.

I don’t use the water pan in the Wsm anymore goin over coals and I love it the fat smokes the meat. Totally different flavor and better
