Hi! If you only stay in Vienna, I can recommend the Wien Mobil App. In this app you can search for transportation and you can also purchase tickets for the public transport in Vienna. It varies depending on the attraction. For Schönbrunn, for instance, you'll need to purchase a regular ticket for the "Grand Tour." if you want to see all the rooms. You can do this either on-site at the ticket counter or through their website (I recommend the latter, as it allows you to select your time slot in advance).

If you take the train to Meidling, you have to buy your ticket at one of the machines. Just select the destination you want, and it will calculate the correct amount for your ticket. So yes, it can be done with one ticket that includes the fare for the whole ride. Just make sure that the price for the ride within Vienna is included, but this should be the standard setting.
