I remember playing one called Mega Man Revolution, it was a well developed game with original robot masters, a decent story, and a good soundtrack. The only gripe I had with it was having to play it half screen since you couldn’t exit back to the main menu if you had it set to full screen

A few quality fangames that come to my mind are Undertale Yellow, Sonic Triple Trouble 16bit and Plants Vs Zombies 2 Reflourished. All great "unofficial games" that could surpass the original games.

I've played a few fan games like this, but I was almost surprised not to see The Lecarde Chronicles 2 on this list, an absolutely fantastic Castlevania fan game. I've not played the first one so I can't vouch for it, but I strongly recommend checking it out.
