Whole Roasted Cauliflower with Truffle Butter
Truffle Butter Whole Roasted Cauliflower
This is such an easy Cauliflower recipe. When you roast the cauliflower whole, it has a rich creamy texture to it compared to eating it raw or undercooked.
This recipe can be either a side dish or main.
As a main, roast carrots, broccoli and mushrooms if you like along with the cauliflower. Plenty of options.
Recipe:
Ingredients:
1 each- whole cauliflower
3/4 stick- butter
2 TBSP- truffle oil
use any ratio of the following that you prefer- it’s taste preference.
chopped parsley
chopped chives
chopped garlic
fresh ground pepper
Method:
Rinse cauliflower and remove the green leaves.
Cut the stem from the cauliflower, so it lays flat.
Boil the cauliflower for 4 minutes, until it is fork tender.
Remove the cauliflower and set aside as you make the butter.
Add 3/4 stick of softened butter to a mixing bowl.
Add parsley, chives, garlic, truffle oil and pepper.
Mix with a fork until completely blended.
Place the cauliflower on a baking sheet.
Cover the cauliflower with the butter mixture.
Roast at 375F for about 45 minutes.
Watch to make sure it does not burn on the top.
Remove and serve.

    Nice improv on the fly! From someone practicing empanada making using various doughs from corn to cassava to plantain these past few days, I suggest you press the empanada between the plastic with a flat bottom small skillet , open plastic to fill, then carry the plastic once again to bring one side of the dough back over to the other side to so both edges meet to cover completely giving your half moon shape; leaving the plastic in place, use your cutter or a bowl to trim the edge.. Open your plastic, lift, if necessary, complete sealing, shaping of cut edge suite fingers and voila, ready for the fry! This method makes for faster and cleaner shaping and cutting. Bon appetite

      Remember to smear a bit of cooking oil onto your hands and plastic before handling / pressing dough. I followed your dough prep recipe and used savoury filling instead of sweet. Everything was smooth sailing. Next time I’m going to coat shaped empanadas in cornflour before frying to give it a crispy contrast much like rellanos de papas made with potato dough. I was surprised that after frying w/o a coating to find the plantain dough was not so crispy. Fried and browned nicely, but still a true crisp per day. I think the crispy exterior will particularly enhance any sweet filling. Much like a Mc Donald’s apple pie! 🤣🤣Thanks again.

      Hi thanks for watching. Season them as soon as they come out of the oil, while they are still really hot. The oil will help the seasoning to stick, toss them around and you are good to go 😉

      The frozen seafood combo bags I buy, never look as good as your scallops. Corn on the cob is reasonable now. Maybe consider making a seafood corn chowder on the grill, to give it a smoky flavor? Another idea; do a broiled bake in olive oil, in a clay dish. On the grill, of course, lol. Accompanied with garlic cloves, onions, anchovies and olives? Sort of a Greek vibe.
