Coconut Pineapple Cake:
60 g (1/2 cup) all-purpose flour
10 g (1 tbsp) cornstarch
30 g (1/3 cup) unsweetened desiccated coconut
1/4 tsp baking powder
1/4 tsp baking soda
Pinch of salt
1 large egg
35 g (3 tbsp) white granulated sugar
45 g (1/4 cup) flavourless oil
35 g (3 tbsp) coconut milk
55 g (1/4 cup) small pineapple chunks
Decor:
100 g (1/2 cup) whipping cream
20 g (2 tbsp) white granulated sugar
1/2 tsp pure vanilla extract

    I made this cake this past weekend and it turned out eggy and dense. The egg would not whip up properly. It still tasted fine to me, since I'm used to eggy cakes, but I was hoping it would be more fluffy. Unfortunately I probably wouldn't make it again :(

    Been too long! Glad to see you back! Have you ever tried using a little unflavored gelatin to stabilize the whipped cream? I use it for my chocolate cream pies whipped chocolate topping. :)

      there's extra light taste olive oil meant for baking which should work but most olive oils have too strong of a flavour to be used for this recipe
