Strawberry Ice Cream Recipe

Full Recipe:
Main Ingredients:
3 ½ cups cream base
1 tsp vanilla extract
1 lb strawberries
1 Tbsp white sugar
2 Tbsp water
Directions:
Strawberry Reduction
Wash and hull the strawberries.
Put strawberries, sugar and water in a saucepan over medium heat, stirring occasionally until the mixture starts to bubble and thicken.
Reduce the heat to low and let the mixture simmer until the mixture is reduced and water is evaporated, stirring occasionally so the bottom doesn't burn.
Use an immersion blender to puree the remaining berries.
Once pureed, pour in an airtight container and let cool in the fridge.
Makes about 1 cup.
Ice Cream
In a bowl combine cream base, vanilla, and 1 cup strawberry reduction.
Pour into the ice cream maker and churn. Churn until the mix starts to look solid and firm. It’s ready when a spoon is pressed across the top and it should leave an impression without collapsing for just a second.
Turn off the machine and remove the dasher.
Fill the ice cream container.
Cover and freeze for 8 hours or overnight.

    0:55 I’m sorry but did you just say “half a cup of xanthan gum”? I know it was just a mistake but I can’t help but think what half a cup of xanthan gum would do to the ice cream, it sure would turn into snot lol.

    Hi Creamarie, I just tried Adam's technique last weekend using a custard. It turned out ok but there were visible ice crystals upon eating. Nothing like a professional product but it was doable for home consumption. The taste was amazing but the texture wasn't as smooth as I wanted. So no matter what a professional machine is needed. What are your thoughts on the Ninja Creami vs kitchenaid ice cream bowl attachment vs lello 4080 ?

      There are definitely ingredients you can add to inhibit the formation of large ice crystals. The two main ones I use are corn syrup and xanthan gum. I have not used a Ninja Creami so I don't have an accurate opinion on it. But what I think of when I see it is scooping ice cream and putting it in a cup or bowl then pouring milk on it and mix/mashing it up with a spoon. I call this a poor mans milkshake (I did this a lot as a kid). Delicious but not the creamiest. Again, I haven't tried the Creami so I don't know for sure. I love freezer ice cream bowls. They are so easy to use and provide you with yummy ice cream (according to your ingredient measurements). Kitchenaid and Cuisinart are very common. The only downside to a freezer bowl is that you have to prepare. It has to be frozen for at least 12 hrs to make your ice cream properly and you only get one use out of it before you have to freeze it agin. It sounds like the Lello 4080 is a compressor machine. I pretty much only use my compressor (Whynter 2.1qt) these days. I make several batches of ice cream a day and I don't have to freeze the bowl, the machine does that for me. So if you're making several different flavors a day, get a compressor. If you're only making ice cream occasionally, a freezer bowl is the way to go. I hope this is helpful to you.

      I don't have recipes that exclude corn syrup or xanthan gum, but you can easily leave them out. However, they both play a key roll in the texture of the ice cream. Corn syrups roll helps in the freezing process of the ice cream and inhibiting the formation of large ice crystal. Xanthan gum helps give a smooth creamy texture. Things to conceder when making your ice cream.

    The only better would be some homemade shortbread cookies pieces all covered in a semi sweet chocolate . The flavor was never in my freezer for very long and not in the stores long enough . RIP Cool Britannia, m

    I have had ice cream from other countries and across the US. The very best I have ever had is from Boise ID at a shop called The STIL. If you ever have the opportunity to visit , theirs is excellent.

    I am having so very hard time believing that any ice cream store would actually sell their products like this to each customer unless it is being sold at a high cost as a special, would that not eat away the store revenue because a single person would never eat half of it unless maybe it is a party?

    Looks like a great day to be in the kitchen and just making it better than the rest!!! Everything I can make myself I usually do, aside from a couple of very obvious things like Chipotle and HELLO pizza , but buying things that I usually have to start my day with like coffee creamer or end the night with like a chocolate sauce that is the only way to go. Easy too , some of the people who I have shared with always have a few seconds of the mind blown confused and then the rest of the time we agree on a lot of different things that are so much better than the International Delight or just how wonderful I am and blah blah ....lol. Hopefully you have on occasion enjoyed your favorite bar or chip heated up in some heavy cream ? Lately I have been obsessed with Ritter Sport Praline, some Vanilla bean paste and Target heavy cream..... can't wait for the next one.❄️

    Please do another video follow up and compare these with Organic healthy comparisons will ve very interesting for kids too thanks!     Adam Ragusea is pretty good at doing his research, explaining his methods, and being honest about his failures. He's also practical about home cooking. Most people are going to perhaps make ice cream at home once in a blue moon. Buying an ice cream machine would be ridiculous.
