Sukhdi or Gol Papdi
Ingredients: Wheat flour, Jaggery and Ghee
1) First, prepare the plate or thali to set the sukhdi. Grease the plate (bottom and sides) well with ghee.
2) Take the 1 cup of ghee in a pan. Turn the heat on low-medium.
3) Once the ghee is melted and gets slightly hot, add 1 and 1/2 cups of wheat flour.
4) Mix with a spatula. it will be like the thick, lumpy paste.
5) Roast it with stirring constantly for 4-5 minutes. Or till the atta gets some color and you will get a toasted aroma of the flour.
6) As soon as the flour is roasted, turn off the stove. Then add 3/4th cup of jaggery.
7) It will melt right away. Quickly mix it.
8) Immediately pour into the prepared plate, even out the surface using back of the spatula or back of the steel glass or katori.
9) Let it cool down slightly. While it is still warm, Slice into desired shape (diamond/square) and size. If it cools down completely, you cannot slice it properly.
10) You can serve this warm. Or let it cool down completely, remove the pieces gently, and serve.
