Cooking is one of the best way to learn new cultures and traditions. It is also an irreplaceable asset when it comes to teaching my children Polish heritage. POLISH CUCUMBER SALAD | MIZERIA - Vol. 2 | Polish food
During summer there is nothing better than cold, fresh and healthy food. Mizeria - Polish Cucumber Salad is all 3 of those. It is super easy and quick to make, and packed with flavors.
This is my second version of Mizeria, and this time I added few other flavors and textures to put a small spin on this very traditional Polish salad from cucumbers.

INGREDIENTS LIST
1 cucumber
4-5 radishes
1 tsp of sugar
1 1/2 tbsp of vinegar - I use champagne vinegar
1 big tbsp of greek yogurt
1 tbsp of Bryndza - cream cheese made from sheep milk
bunch of dill
salt and pepper
For the vegan version
You do not have to add the yogurt or the cheese, the salad is delicious made with pickled cucumbers and radishes.

Can you use red onion?
This is an old family recipe shared by my Nana Rose. Sadly she has passed but taught our family how to make stuffed peppers, stuffed cabbage, ravioli she called Perrogies and the most delicious cookies she called ho'ost. Please forgive my spelling errors, they are all in Polish to me. 😉
In Moldova we do the white borsch a bit different, we definitely put some sour cherry leafs, dill seeds and celery or lovage leafs and it is our sour produce for the borsch itself or other sour soups.
I want to try this!!! My exes mom made it but she used oats- she called it borst. Im debating if i want to so the one with sour cream and vinegar for my first try and then do a fermented one anorher time. Idk must decide soon as easter is a week away!!!
Hello I have a question I am Polish and my Babic always make the following during Christmas and Easter, can please tell me the correct name of it. As we called it fresh kielbasa soup. Bring to a boil fresh kielbasa for about an 1 hr, as it's cooking skim off the foam. Take out the fresh kielbasa set aside. One container of sour cream mixed with the kielbasa liquid in a separate container. Prior to make sure you saute your onions. Dehydrate your mushroom night before. Pour in the sour cream mixture, add your onions and mushrooms. add vinegar & continue to cook low heat, 30 min. Place into a in a soup bowl. Cut your fresh kielbasa sm pieces add 1/2 hard boiled eggs. Optional add in some horseradish. Thanks please let me know your thoughts and what it's called.

Hi, thank you for the recipe. I made this yesterday including your version of the sakwas. It was great. Not like I have eaten in Poland, it was less sour. The sakwas was made in 5 days and i added lemon juice. I wonder how to make it more sour.
Hi, I am grateful for your kind words. Sometimes it depends on the flour you buy, adding lemon juice or horseradish or more garlic could help. Also keeping it for longer.

In the 60's, My neighbor's grandma visited from Czech. She made a wafer cake that was so delicious. I believe this may be very close to her recipe. I recall the very middle layer had a layer of jam. (Jam was red. At the time I thought raspberry though it may have been strawberry, lingonberry ir just a berry mix.) Thank you for sharing!

Krakow is fascinating. Beautiful. Old. Unusually there were almost entirely stunningly pretty young people. Couldn't see one young person who was not just lovely. But many middle aged and older folks looked hurt and sad. Poland has been through much. t's a city with 5 universities. I loved it too. Very sophisticated. Gorgeous where we were. Central square.

Aged Żurek its much better. I will be 51 years aged in 2 weeks :) lekko brytyjski akcent slysze u Ciebie. Polskiego akcentu nie slysze wcale. Tutaj na Alasce czesto mnie pytaja czy z Rosji jeste. Muj akcent nie zniknie
Oj napewno im dłuższy tym lepszy ale mnie jeszcze troche brakuje - Wszystkiego najlepszego z okazji urodzin (za dwa tygodnie). Ja trochę mix językowy, ale staram się uczyć

u can use as well dried cherry and grape and no need to soak them up to 3 hours, just boil that 25-40 minutes at low heat

I'm from Uruguay. Fell in love with this soup the two times I went to Poland, so now I make it at home. Why not chopping the vegetables before cooking? Isn't it easier?
They get soft to quick and the broth does not have that much flavor
Yes they are the same soup and different names, it is just some people use the words differently based on arbitrary distinctions. That is how you were taught- that żurek is made with rye and white borscht is made with wheat, but if you checked it that is an enitrely retroactive distinction/spurious.

Bigos is absolutely delicious.I make it often.I use red wine,chicken stock,and apple juice for liquids.smacznego🙂
My husband is from Lublin, and this is his favorite snack! The only thing different then the ones we buy in Lubin is that the onions are usually caramelized first. But I'm sure yours tastes fine as is...

I had gzik when living in Wroclaw, Poland, and I absolutely loved it. I started making it all the time with full-fat sour cream and lots of garlic (no radish). SO delicious on boiled potatoes.

Brown sugar, syrop - agave or maple, the cranberries are sour they need a bit of sweetness.
