    Ben any change in the recipe for Basmati or Jasmine rice?

      Great question, most people use a rice:water ratio of 1:1.5 cups Don’t be as aggressive with washing as you are with jasmine Cook for 15 min-17 min Let rest for 5-10 min Fluff. If you make it and it’s too watery/moist, then adjust the time on the next time a bit longer to cook. But I’ve made it that way and it comes out good. Full disclosure, I’m not the biggest fan of basmati, so only made it a handful of times.

    I usually make boneless, skinless thighs with a marinade made with a lot of Weber N'Orleans Cajun Seasoning, add extra Cayenne pepper, paprika, canola oil, and a lot of lime juice. I usually don't need to add any salt. Then marinade for about 2 days and then grill it on the bbq with lump charcoal. It's the best. Works great for chicken wings too.

Making chicken thighs on the grill reminds me of my time living in Israel from several years ago. Everytime we went to a wedding, they usually had boneless skinless chicken thighs. I always wished they would make them Cajun style, though. Lol

      lol in Israel it’s called Pargiot. It’s very rare that they will have other than middle eastern spices on them over there. But they are so juicy and delicious…

      @ImpossiblyKosher Yes, I remember the name. But I wasn't sure if anyone else reading the comments would know what Pargiot is. When I lived there, I made my own Cajun Seasoning. But it wasn't quite as good as the Weber Cajun. I remember it was hard to find bottled lime juice or even fresh limes there. Taco shells were hard to find in Israel, too. I did find some at a Tiv Ta'am grocery store. I don't think the store is kosher, but the Ortega Taco shells were kosher certified.

      tuna for sure is great, I find that site fish is the mildest ceviche, but I've done it with Salmon. For me it was not the idea texture. I prefer salmon as sashimi.

      honestly, negligible, since its closed, it holds in the heat. Which is why using a grommet is actually better than just a simple probe hole. I think the link in the description says 475 or 500 F, but you shouldn't be putting it directly above blazing coals. I have yet to have an issue though.

      If you do low and slow the sides are hot. If you use a vortex the middle is hot. So were is the correct location on the base.

    Ben, I’m currently using an Orion Smoker so to doing the grilling I must go the my gas grill. I predominantly use the Orion for chuck roast and the are delicious. I usually do two, one to eat now and one to put in the refrigerator to slice for sandwiches later. Thanks for the videos.

    Any suggestions on seasoning the grates? Like using Onion? Used your cook recipe over 10x great guideline, IMHO…

      Thanks bud!! I do my best :) On the seasoning, if you mean before cooking, I used to season with onion or high smoke point oil like grapeseed oil. But burgers I use are not lean, so the fats that come out season the grates. The onion is more to clean the grates at this point TBH (for me)… When making smashburger, I’ll either throw on a bit of tallow, or grapeseed oil.

    Didn’t know you are in Canada! I’ve seen a bunch of your other videos where you’ve used the Spider Venom… how did you end up getting one in Canada since they don’t ship here? Do you still like it?

      Yes sir! Great to hear you like the content. So the issue is the import taxes, Spider Grills won’t cover them and they end up being like 150$. I’m sure if you tell them you’ll pay for the taxes, they won’t mind shipping to you. Or ship to a US address and pickup. :)
