Thanks. I (Tom) might be wrong. Dan, one of our Sharpening Specialists, also thinks it gives a flat grind. I'll have to do a bit more sharpening and pull my magnifying glass out 🔎🔪

By making a secondary bevel at around 30 degrees, you only have to spend 2 strokes initially on the 1000 side and just a couple more on the 8000 side to get a sharp edge but regrinding is neccesary when the secomdary bevel gets large. Matt estlea has a video on sharpening with a honing guide, but Rob Cosman and Paul Sellers have videos on freehand sharpening.

This angle setter is an absolute must have!! I have two machines and three bars, yep, I know.. so I preset the bars beforehand and then I can just go from the first machine with the SG-250 stone, then next machine with the SJ-250 stone and finally go back to the first machine to hone. Very fast, for me at least, to get a very sharp knife and happy customers (side gig) Just get it! :)

Jungle prison would be a tough one. If you were in a Russian gulag (and somehow had access to watermelon), I'd research what Artic explorer Peter Freuchen did in order to chisel his way out of his frozen camp.

Can you do a turnip the same way? Do I need a diamond stone?
I could certainly try a turnip. If you've got some especially wear resistant steels, diamond stones will help. Regular water stones do a great job on most steel types
What angle were you sharpening the front at?
Just matching the current angle, which I think is 30 degrees.
One question left! Why should someone mess around with waterstones and all it's dirt and water everywhere, when you can reach the same result, no better, because the angle is fixed, with a Tormek T-1 or T-2 Pro out of the box. And even better when you change the grinding wheel of the T-2 Pro to extra fine, as I have done? Not to forget, Tormek does the job in less time.
There are multiple reasons to choose whetstones over a tormek, here are some I can think of. -Any fixed angle system will struggle to sharpen some blade shapes, thicknesses, or sizes, where whetstones are not as limited. -Tormeks are expensive purchases, and whetstones can be easier on the wallet. -Whetstones have a larger selection of grits to choose from. -Whetstones do not need as much storage space and do not require any electricity. -Whetstones are quieter. -Whetstones don't remove metal as quickly, making them better for those who don't want to remove any more steel than they have to
I would add is that the experience is totally different with water stones. I like the tactile feel of using water stones, some people refer to it as the 'feedback' the stones provide. It requires a level of skill to hold the knife at a consistent angle, and there is satisfaction to be had from developing those kind of skills. Fortunately there are lots of different sharpening options out there to suit different people's needs. If you've got a T-2 and it works for you, great! If you want to learn a new skill, maybe try a more traditional method of sharpening as a way of deepening your knowledge around knives and their maintenance, stones are awesome for that.

Steels don't sharpen the blade, they correct the burr, that gives the appearance of sharpening.

Steels don't sharpen the knife. They straighten the rebarb on the edge. The edge gets bent to the side, the steel just bends it back to be straight. But you are not sharpening, as that requires removing significant amounts of material... Which you dont want while handling food...

My dad used two knives. He sharpened them with each other. 🔪
There is an issue with this tool !!!! IF, you have a small knife with more than 1 blade, the Tormek will center the knife, NOT THE BLADE. In order to center the blade, you must find a method for making the blade the center line of the object the TORMEK is holding. I do this by wrapping some tape around my knife and adding popsicle sticks to one side until the blade centers up even on both sides.
Good point. If you're using this on something like a Swiss Army Knife or Leatherman tool, you'll need to use this technique. Thanks for the tip!

What stones do you use? The 1000 grit sound pretty coarse. Pretty good work 👍
These rods are needed only to those who don't know how to remove a burr while sharpening a knife. Actually that's insane a huge variety of products and skills just to make not properly sharpened knife to cut with burr that should be removed for long lasting apex. Just Why not to get a skill to remove it properly?

Just found your channel. Excellent video. I have several combat knives and large, heavy duty knives (9" blades) with 1/4" thick spines. They are difficult to sharpen on my Russian made TSPROF K03 because the holding jigs do not accommodate 1/4" thick spines. Does the T8 have any solution for this?
Too expensive for most people and from what I’ve heard too slow for use in a sharpening service/business
Commercial kitchens used to have their knives ground either once a fortnight or once a month, either the grinder brought his van to you and did the knives or exchanged x number of sets and took the blunt ones away for sharpening. Steels were used in the meanwhile to keep the knives going between visits. Really this is only good for cheaper knives, you wouldn't want to give someone else good knives to sharpen. If you are cutting all day you'll have to use a steel to keep going, no matter what knives you are using, ceramic and diamond rods take too much metal off too fast.

If you are using "sharpening" steel and it works then you are doing bad job at sharpening because these things do not sharpen or realign your edge, they only straighten the burr and if there is burr it means you did bad job at sharpening.

i just had a question with sharpening a knife on a sharpening block how long would you say it takes to get a nice sharp blade?
That's tough one to answer since there are a lot of different variables, how blunt the knife is, what sharpening stones you're using, the kind of steel the knife is made of. Generally, an intermediate sharpener should be able to get a blunt knife sharp in maybe 10-15 minutes. But it could be as quick as 5 or as long as 30.
show nicely how you use the sharpness test correctly, otherwise you are not very reliable.😊

Correct. Just the T-8 Original and T-4 Original. It does apply to any Bundle that includes a T-8 or T-4 Original.

strangely enough, the only thing missing was to perform a sharpness test by hitting the knife with a hammer😂
