Croatian Shaksuka, Patakenjac
Croatian shakshuka, or patakenjac, comes from the island of Vis. A beautiful island, that also happens to be the furthest inhabited island from the mainland. There are a lot of thins on Vis that you can't find anywhere else, and patakenjac seems to be one of them.
The dish itself is very simple, sweat an onion and bell pepper til soft and add tomatoes. Crack eggs into the sauce and cook til done. Really simple, which shows its humble beginnings as a meal born out of necessity. Simple to make, but incredibly flavorful. And nutritious. Make sure to eat with bread and dip in the runny yolk, it's the best part of the egg.
The recipe I show here is as simple as it gets, but feel free to add more spices and flavors if you wish. A few cloves of garlic or maybe a teaspoon of paprika would add a little something extra.

This looks like it could be delicious! I have a question, what kinds of vegetable based dishes do Croatians eat? I'm not vegetarian or anything just curious!
Most vegetable based dishes are going to be sides: sataraš, zucchini patties, asparagus and eggs, anything with potatoes (if you want to call that a vegetable), or any stewed vegetable (sautéed then cooked in its own water til soft). Of course salads: cabbage salad, cucumber and tomato salad, French salad, beet salad, to name a few. Soups too: pumpkin soup, tomato soup, vegetable soup (which has variants depending on the season to highlight in-season vegetables). There are a few main dishes that are vegetable-based. Čušpajz od kelja is a stew made from Savoy cabbage. Čušpajz od mahune is a green bean stew. But both can have a dried meat like pancetta added. In Istria they make their own pastas, and those can be paired with a tomato sauce. There aren't many vegetable-based dishes though. Any meat-less meal typically uses beans, mushrooms, or fish. Croats surely love their meat!

@@pelicanus4154 oooo, that could be good. I usually slice the leftover “empty” ones into discs about a centimeter in length and fry those in butter for an easy breakfast. Never thought about the whole ones but I like the idea!
