    I love New Orleans tamales, especially Old Style Tamales brand out of Harvey. I used to stop by the Piggly Wiggly on my way home to pick up a couple dozen and end up eating them before I got home to New Iberia. This is the closest recipe I have found to that and they are delicious! Highly recommended.

    I'll tell you I really wanted to watch your whole video. It looks like an awesome recipe. What ran me off and made me stop watching was the, 'broken record hot Chilli mama" music. I wanted to listen to your instructions but had to hit stop. Broken record music was driving me mad. I'm telling you because have no filter, so whatever, but I know a lot of people think the same, but just don't say anything.

    I made 100 tamales but not like this with the cornmeal. I make the masa. I also mark the red sauce with pepper pods. I’ve heard of these cooked in juice but never tried them. I used corn husks also. I’m going to give these a try.

    I make boudin myself, and when I see it twisted off in short links, I know it's not authentic. All the best commercially made boudin is made and sold without the little Yankee twists.

      What lol you just move to Louisiana or something? Almost every gas station I’ve seen in Louisiana served boudin. If you didn’t get links it was cut into bite size servings. But if you’d get links it was links bub. Like fried boudin is a link of boudin.

      @@katlynnstephens3559 I have lived in the heart of Cajun country for 50 years and have eaten my share of boudin. I know all the best places to buy it, and even make it myself sometimes. It's never twisted up. If I see it twisted up, I figure there' must be a Yankee behind it. 😁

Also can we quit ridiculing non Cajuns anyways: you’ll be crying when our culture dies but you help killed it with that attitude.

    I'm not from Louisiana, but I do make boudin every year or so, and I come to this video and a couple others each time, to get ideas for my recipe for the year. This year I want more liver flavor, and way more heat, is the theme.

      Once you scoop the meat out of the pot, there's not much left in the pot. It's going to be a lot of meat in the pot with the meat, and that's plenty. Thanks for watching!

    The whole point of the liver is to taste it. Boudin is more than just rice dressing put in a casing.

      It's a 2.75 or 3 gallon pot and I bought it from one of my local stores but you can fine them online. I want to say it a bayou classic pot
