Hi all,
I'm Nicky, a self-taught baker, I am constantly learning new techniques and doing lots of research on recipes before I attempt to make them.
I get asked for recipes a lot! so I decided to create a CZcams channel to share recipes with friends and family but why not with everyone else :)

My Opera Cake | layered desserts
Giving you my take on a classic recipe, that has chocolate and coffee flavour in every bite!
I am also showing how to get creative with building a layered dessert by using tools that you might have around already. In this recipe, I tried to avoid buying a cake frame since they are so expensive and take up a lot of space. Check out the video to see what I used instead ;)

Ingredients.
Almond sponge cake
60g icing sugar
60g ground almonds
20g A.P. flour
60g egg
15g melted unsalted butter
70g egg whites
10g sugar
Coffee syrup
30ml simple syrup (equal parts sugar and water, heated up together until dissolved)
1 shot of espresso
Coffee buttercream
190g icing sugar
100g unsalted butter
1 shot of espresso
Pinch of salt
(Adjust sweetness to your liking)
And if too stiff, add some cream.
Chocolate ganache
100g whipping cream
100g dark chocolate
Bring the cream to a boil and add to the chocolate. Stir gently to combine until smooth.
Enough for 6 portions

I love this channel! One of my favourite baking channels for sure. Lovely and professionally made videos with a lovely presenter who isnt too in you're face but with still a nice and relaxing personality. My only single possible criticism is that i wish she put out videos slightly more ;D haha

Thank you, I wanted to honor the beauty in old school recipes that are simple. Instead know some people use condensed milk but I wanted to go back to basics here 🙃
@@BakingNicky I have tasted authentic Dulce de Leche and it was made basically the same way you made yours and when I compare that taste to the stuff made with condensed milk the difference is like night and day. It's like the difference between butter and margarine. I think that many people don't like the idea of having to pay close attention to what they are cooking for an extended period of time so they avoid that kind of cooking and opt for boiling a tin of canned condensed milk for a couple of hours and calling it Dulce de Leche. That should be a crime or at least a sin. Thanks for your thoughtful reply to my former comment.

why do you cook the mix? I just put the ingredients together and throw everything in the ice cream maker. what is the benefit of cooking it?
