ingredients
Tofu 豆腐 580g
Minced Beef 免治牛肉 250g
Fermented Bean Chili paste 辣豆瓣醬 75g
Sichuan Peppercorn 川花椒 5g
Dark soy sauce 老抽 8g
Granulated sugar 白砂糖 20g
Water 水 250ml
Minced Ginger 薑蓉 12g
Minced garlic 蒜蓉 8g
Green scallion 20g
Pork Marinade 豬肉醃料
Light Soy sauce 生抽 8g
Granulated sugar 白砂糖 8g
Xiao Xing Wine 紹興酒 15g
Tapioca starch 木薯粉 4g
Corn oil 粟米油 5g
Water 水 20g
Slurry 獻汁

I use Black Bean 🫘 Garlic Sauce, Garlic, Chilli 🌶️ Sauce, Black Pepper Powder, and some sugar to balance the flavour and lastly place soft boiling tofu.
